Authentic Italian Pizzoccheri della Valtellina (Buckwheat Ribbons with Savoy Cabbage, Potatoes, and Melted Fontina)
A hearty Alpine specialty from Lombardy featuring earthy buckwheat ribbon pasta boiled with sweet Savoy cabbage and tender potatoes, layered with gooey Valtellina Casera cheese and drenched in sizzling garlic-sage brown butter.
History & Origins
The Ancient Buckwheat Heritage of Teglio
Originating in Teglio in Lombardy’s Alpine Valtellina valley, Pizzoccheri celebrates buckwheat (grano saraceno), which thrives in poor mountain soils. Everything cooks together in a single copper pot to harmonize mountain starch and sweet winter greens.
Ingredients
Buckwheat Pasta & Alpine Boiled Vegetables
- •12 oz Dry Pizzoccheri della Valtellina (or handmade 80% buckwheat/20% wheat ribbons)
- •8 oz Savoy cabbage, core removed and coarsely shredded
- •8 oz Russet or waxy potatoes, peeled and cut into 3/4-inch dice
- •8 oz Valtellina Casera DOP cheese (or young Fontina/Bitto), thinly sliced
- •3 oz Parmigiano-Reggiano or Grana Padano DOP, finely grated
Finishing, Garnishes & Chef’s Additions
- •6 tbsp High-fat cultured unsalted butter
- •3 cloves Fresh garlic, crushed and lightly bruised
- •8 leaves Fresh garden sage
- •1 pinch Freshly ground black pepper
Step-by-Step Instructions
PREPARATION & METHOD
Bring a large pot of salted water to a rolling boil. Drop in diced potatoes and cook for 5 minutes. Add shredded Savoy cabbage and boil together for another 5 minutes.
Scatter Pizzoccheri pasta directly into the pot with boiling potatoes and cabbage. Cook for 10-12 minutes until pasta is tender yet toothsome, keeping all vegetables integrated.
While pasta boils, melt butter in a skillet over medium heat with smashed garlic cloves and sage leaves. Cook until butter turns nutty hazelnut brown (noisette) and garlic turns golden and crisp.
Using a slotted spoon, lift pasta and vegetables directly into a warm serving dish in alternating layers with Casera cheese slices and grated Parmigiano. Pour hot bubbling sage butter over the top to melt the cheeses; rest 3 minutes before serving.
Beverage Pairing
Valtellina Superiore DOCG (Nebbiolo) / Sassella
An Alpine Nebbiolo (locally Chiavennasca) from Valtellina with high acidity and mineral tannins cuts through rich melted Casera and brown butter.
Culinary Science Insight
Single-Pot Starch Saturation & Casein Emulsification
Simmering cabbage and potatoes alongside gluten-free buckwheat pasta releases potato starches that cling to pasta ribbons, creating an adhesive surface that binds melted cheese lipids cleanly without greasy oil separation.
