Authentic Cuban Masitas de Puerco Fritas (Crispy Garlic Citrus Mojo Braised Pork Chunks)
A Cuban culinary staple featuring juicy pork shoulder chunks simmered in tart sour orange garlic mojo until tender, then crisped in their own rendered lard and crowned with sweet mojo-sautéed onions.
History & Origins
The Beloved Paladar Classic of Havana
Masitas de puerco represent the quintessential Cuban technique of braise-frying: cooking pork cubes in citrus mojo and water until the liquid fully evaporates, letting the pork fry in its own rendered pork fat to shatteringly crisp edges.
Ingredients
Marinated Pork Shoulder & Citrus Mojo
- •3 lbs Pork shoulder (boston butt), trimmed and cut into 2-inch chunks
- •3/4 cup Bitter Seville sour orange juice (naranja agria) or equal parts lime and orange juice
- •8 cloves Fresh garlic, crushed in mortar with coarse salt
- •1 tsp Ground cumin and 1 tsp dried oregano
- •1 cup Filtered water for braising phase
- •2 tbsp Pure pork lard (manteca) or neutral oil if needed
Finishing, Garnishes & Chef’s Additions
- •2 large White onions, sliced into thick rings
- •1/4 cup Reserved sour orange mojo juice for finishing splash
- •1 platter Crispy fried green plantains (tostones) or sweet maduros
- •1 bowl Cuban black beans and white rice (moros y cristianos)
Step-by-Step Instructions
PREPARATION & METHOD
Toss pork shoulder chunks with sour orange juice, crushed garlic, cumin, oregano, and salt. Allow to marinate for at least 30 minutes (or refrigerate overnight for optimal garlic penetration).
Place pork along with its marinade and 1 cup of water into a wide heavy caldero (Dutch oven). Bring to a boil, cover, reduce to medium-low, and simmer for 30 minutes until meat is fork-tender.
Uncover pot and raise heat to medium-high. Boil off all remaining liquid until only rendered golden pork fat remains. Fry pork chunks in their own sizzling fat for 8-10 minutes, turning constantly until deeply crusted and golden.
Remove pork to a serving platter. In remaining hot pork drippings, toss sliced onion rings for 2 minutes until tender-crisp. Splash with reserved sour orange juice, scrape pan fond, and tumble sizzling onions over crispy pork.
Beverage Pairing
Cuban Cristal Cerveza / Classic Mint Mojito
An ice-cold pale Cuban lager or a refreshing rum mojito accented with fresh spearmint cuts through the rich pork crackling.
Culinary Science Insight
Two-Stage Braise-to-Confit Dehydration
Initial simmering hydrolyzes tough collagen into juicy gelatin under 212°F; once moisture evaporates, cooking temperature surges to 350°F in pure fat, driving deep Maillard browning without drying interior meat.
