- •1 tbsp Pure toasted sesame oil and 1/2 cup rich chicken broth

Step-by-Step Instructions
PREPARATION & METHOD
In a large bowl, whisk oyster sauce, light soy, dark sweet soy, Shaoxing wine, sesame oil, and chicken broth. Toss soaked, drained glass noodles in sauce to absorb flavors.
Arrange pork belly strips on the bottom of a heavy ceramic clay pot or Dutch oven over medium heat. Sizzle until pork fat renders, then add smashed ginger, garlic, cilantro roots, and crushed peppercorns.
Pile marinated glass noodles directly over the sizzling aromatics. Neatly arrange head-on tiger prawns across the noodles and pour any remaining marinade over the top.
Cover tightly with the clay pot lid. Cook over medium-high heat for 8-10 minutes until prawns turn vivid orange-pink and noodles are translucent and chewy. Scatter Chinese celery on top, cover for 1 minute to wilt, and serve hot.
