- •2 tbsp Unsalted butter and 1 tbsp granulated sugar
- •1 tbsp Pure Persian rose water
- •3 tbsp Slivered raw pistachios and 2 tbsp slivered almonds
Step-by-Step Instructions
PREPARATION & METHOD
Sauté onions in ghee until translucent. Add chicken thighs and season with turmeric, cumin, and salt. Stir in tomato paste, lemon juice, half the bloomed saffron water, and 1 cup water; simmer covered for 40 minutes.
Parboil soaked basmati rice in heavily salted boiling water for 6-7 minutes until grains are tender outside with slight bite; drain. Steam over low heat in a covered pot wrapped in a damkoni towel for 30 minutes.
Melt butter in a small pan over gentle low heat. Add rinsed barberries, sugar, rose water, and 1 tbsp saffron water. Sauté gently for 60-90 seconds until plump and ruby-bright (do not burn).
Toss 1 cup of steamed white rice with remaining saffron water to turn golden yellow. Layer fluffy white rice on a serving platter, crown with saffron rice, glazed barberries, pistachios, and almonds, and flank with braised chicken.
