Step-by-Step Instructions
PREPARATION & METHOD
Place smoked haddock fillets in a saucepan with whole milk, water, bay leaf, and thyme. Bring to a gentle simmer for 5 minutes until haddock flakes easily. Lift fish onto a plate and strain poaching milk.
In a heavy pot, melt butter over medium-low heat. Add sliced leeks and cook gently for 8-10 minutes until soft and sweet without browning.
Pour reserved poaching milk over the leeks, add diced potatoes, and simmer for 15 minutes until tender. Lightly crush roughly half the potatoes against the pot side to thicken broth.
Flake poached haddock into large pieces, discarding any stray skin or bones. Stir haddock and heavy cream into the pot, gently heat through for 3 minutes, and garnish with chopped fresh parsley.
Beverage Pairing
Peated Islay Single Malt Scotch / Crisp Chablis
A splash of smoky Islay whisky or a mineral-driven French Chablis mirrors the peat smoke of the haddock while cutting through the rich buttery cream.
