Authentic Mexican Pastel de Elote (Sweet Fresh Corn Cake with Dulce de Leche)
A naturally dense, moist, and custard-like traditional Mexican fresh sweet corn cake, baked with real corn kernels, sweetened condensed milk, pure butter, and cinnamon, served warm with cajeta.
History & Origins
Sacred Corn in Mexican Panadería
Unlike American dry cornbread, traditional Mexican pan de elote is a sweet, flourless or low-flour confection prepared from juicy fresh corn cobs stripped right off the husk, celebrating the foundational staple of Mesoamerica.
Ingredients
Fresh Corn & Custard Cake Base
- •4 cups (about 5 ears) Fresh sweet corn kernels, cut straight from raw cobs
- •1 can (14 oz) Sweetened condensed milk (La Lechera)
- •1 stick (1/2 cup) Unsalted butter, melted and cooled
- •4 large Fresh eggs, at room temperature
- •1/2 cup All-purpose flour and 1 tbsp baking powder
- •1 tbsp Pure Mexican vanilla extract and 1/2 tsp ground Ceylon cinnamon
Finishing, Garnishes & Chef’s Additions
- •1/3 cup Mexican goat milk caramel (Cajeta de Celaya) or dulce de leche for drizzling
- •2 tbsp Powdered confectioner’s sugar for dusting
- •1 scoop Mexican vanilla or cinnamon ice cream (helado de canela)
Step-by-Step Instructions
PREPARATION & METHOD
Place fresh corn kernels, condensed milk, melted butter, eggs, vanilla, and cinnamon into a blender. Pulse until coarsely blended, leaving pleasant micro-bits of fresh corn for texture.
Pour corn mixture into a bowl. Gently fold in flour, baking powder, and a pinch of salt with a spatula just until incorporated into a rich batter.
Pour batter into a buttered and floured 9-inch round springform or ceramic baking dish. Bake at 350°F (175°C) for 45-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
Let cool in the pan for 15 minutes to allow the custard crumb to set. Slice warm into wedges, dust with powdered sugar, and drizzle generously with warm goat’s milk cajeta caramel.
Beverage Pairing
Traditional Mexican Café de Olla / Warm Atole
Clay pot brewed coffee spiced with piloncillo raw sugar, cinnamon sticks, and orange peel pairs sublime with warm buttery sweet corn cake.
Culinary Science Insight
Endosperm Starch Gelatinization & Natural Moisture
Fresh sweet corn kernels contain high moisture and natural milky endosperm starches. As the cake bakes, the starch gelatinizes alongside egg proteins, creating an ultra-soft pudding-like crumb without gluten development.
