Ingredients
Warm Chickpea & Cumin Core
- •3 cups Cooked chickpeas (garbanzo beans) with 1/2 cup of their hot cooking liquid
- •4 cloves Fresh garlic, crushed in a mortar with sea salt into a fine paste
- •1.5 tbsp Freshly ground cumin powder
- •1/4 cup Fresh lemon juice (about 2 juicy lemons)
- •1/3 cup Lebanese extra virgin olive oil
Finishing, Garnishes & Chef’s Additions
- •3 tbsp Golden pine nuts, toasted in olive oil
- •1/4 cup Fresh flat-leaf parsley, finely chopped
- •1 tsp Ground sumac or Aleppo pepper flakes for dusting
- •1 stack Warm pocket pita bread, radish slices, and pickled turnip
Step-by-Step Instructions
PREPARATION & METHOD
Simmer cooked chickpeas in a saucepan with 1/2 cup of their cooking liquid for 10 minutes until piping hot and completely soft.
Using the back of a wooden spoon or pestle, gently crush about one-third of the chickpeas against the side of the pot. Stir in crushed garlic paste and ground cumin.
Remove from heat. Pour in lemon juice and extra virgin olive oil, folding gently so the crushed chickpea starch forms a silky, warm emulsion with the oil.
Spoon into a shallow serving bowl. Top with golden toasted pine nuts, chopped parsley, and a dusting of sumac. Drizzle with extra virgin olive oil and serve immediately with pita.
Beverage Pairing
Fresh Mint Black Tea / Chilled Arak with Water
Strong hot black tea steeped with fresh spearmint leaves or a milky glass of anise-flavored Arak complements the savory cumin and garlic chickpeas.
