History & Origins

Val di Chiana Peasant Heritage

Originating in southern Tuscany’s Val di Chiana, aglione is a colossal heirloom garlic variety naturally low in allicin, allowing whole heads to melt into an unctuous, non-pungent sweet garlic cream with San Marzano tomatoes.

Ingredients

Handmade Pici & Aglione Sugo Base

  • •400 g (approx 3.5 cups) Italian Tipo 00 flour kneaded with 200ml warm water and 1 tbsp olive oil
  • •6-8 large cloves Tuscan Aglione garlic (or mild elephant garlic), thinly sliced
  • •1 can (28 oz) Whole peeled San Marzano tomatoes, crushed by hand
  • •1/3 cup Tuscan extra virgin olive oil
  • •1/3 cup Dry white wine (Vernaccia or Trebbiano)
  • •1 small Dried peperoncino chili, crushed

Finishing, Garnishes & Chef’s Additions

  • •2 tbsp Best quality finishing extra virgin olive oil
  • •1/2 cup Aged Pecorino Toscano DOP, freshly grated (optional, traditionalists often enjoy plain)
  • •1 pinch Flaky sea salt and fresh basil leaves for garnish

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Hand-Roll Pici Strands (‘Appiciare’)

Knead dough until smooth; rest 30 mins. Roll out 1/4-inch thick, cut into strips, and hand-roll between your palms on a wooden board into rustic thick spaghetti-like cords.

2
Step 2: Dissolve Aglione Garlic in Wine & Oil

Heat olive oil in a wide skillet over very low heat. Add sliced aglione and white wine. Simmer gently without browning, using a wooden fork to crush garlic into a smooth, sweet paste.

3
Step 3: Simmer San Marzano Sugo

Pour in hand-crushed tomatoes and crushed chili. Season with salt and simmer for 15-20 minutes until the oil rises to the surface and sauce becomes thick and aromatic.

4
Step 4: Boil Pici & Emulsify in Sauce

Boil fresh pici in salted water for 4-5 minutes until al dente. Transfer directly into the skillet with 3 tbsp pasta water. Toss vigorously over heat to coat each rustic strand.

Beverage Pairing

Vino Nobile di Montepulciano / Rosso di Montalcino

A lively Sangiovese with bright red cherry notes and gentle tannins mirrors the sweetness of melted aglione garlic and San Marzano acidity.

Culinary Science Insight

Aglione Sweetness & Starch Adhesion

Aglione produces almost no alliinase irritation when gently sweated in ethanol and lipids, instead breaking down into sweet disaccharides that fuse with coarse pasta starch to create a clinging glaze.
