Authentic Indian Methi Malai Matar (Creamy Fenugreek Leaves and Sweet Peas in Rich Cashew Gravy)
A regal North Indian classic: tender bitter fenugreek greens and sweet green peas simmered in a velvety, mildly spiced cashew nut and fresh cream gravy perfumed with green cardamom.
History & Origins
Mughlai Royal Vegetarian Refinement
Developed in the imperial Mughal kitchens of Northern India, Methi Malai Matar showcases the art of balancing opposing flavors. The gentle pleasant bitterness of fresh winter fenugreek leaves (methi) is counterbalanced by sweet tender green peas (matar) and an opulent, silky white gravy of ground cashews and cultured cream (malai).
Ingredients
Fresh Fenugreek, Peas & White Cashew Gravy
- •2.5 cups Fresh fenugreek leaves (methi), plucked, washed thoroughly, salted for 10 minutes and squeezed to remove excess bitterness, then finely chopped
- •1.5 cups Fresh sweet green peas (or sweet frozen petite peas)
- •1/2 cup (75g) Raw whole cashews, soaked in hot water for 20 minutes and blended into an ultra-smooth paste
- •1/2 cup Fresh heavy whipping cream or cultured malai
- •1 medium White onion, boiled in water for 5 minutes and puréed with 1 inch fresh ginger and 3 green chilies
- •2 tbsp Pure desi ghee (clarified butter)
- •Whole Spices: 1 bay leaf, 4 green cardamom pods, 1-inch cinnamon stick, and 1 tsp cumin seeds
Finishing, Garnishes & Chef’s Additions
- •1/2 tsp Freshly ground green cardamom powder and 1/2 tsp fragrant Shahi garam masala
- •2 tbsp Heavy cream swirled over the surface before serving
- •Bread: Warm tandoori garlic butter naan or flaky lachha paratha
Step-by-Step Instructions
PREPARATION & METHOD
Heat 1 tablespoon ghee in a kadai or deep pan over medium heat. Add squeezed chopped fenugreek leaves and sauté for 3-4 minutes until softened and dark green. Transfer to a bowl.
Melt remaining ghee in the same pan. Add cumin seeds, cardamom pods, cinnamon stick, and bay leaf until sizzling and fragrant. Pour in the boiled onion-ginger-chili purée. Cook over low heat for 6-8 minutes without browning to preserve the signature pale hue.
Stir in blended cashew paste and 1 cup water. Simmer gently for 4 minutes until thick and glossy. Add green peas, sautéed methi leaves, 1 teaspoon salt, and 1/2 teaspoon sugar. Simmer uncovered for 6-8 minutes until peas are tender.
Lower heat to minimal and stir in heavy cream, cardamom powder, and garam masala. Warm gently for 2 minutes without boiling. Ladle into a warm serving bowl, swirl with cream, and serve immediately with garlic naan.
Beverage Pairing
Sweet Mango Lassi or Off-Dry Riesling
A chilled yogurt-based mango lassi or a Mosel Kabinett Riesling with residual sweetness complements the delicate herbal bitterness of fenugreek leaves and matches the rich cream gravy.
Culinary Science Insight
Fat-Soluble Alkaloid Moderation in Fenugreek
Fenugreek contains the bitter alkaloid trigonelline. Salting draws out bitter water-soluble saps, while subsequent cooking in dairy fat and cashew lipid emulsions coats the tongue’s taste buds, turning harsh bitterness into an earthy savory note.
