Step-by-Step Instructions
PREPARATION & METHOD
Cream softened butter and sugar together in a stand mixer until pale and fluffy. Beat in eggs one at a time until emulsified. Fold in fine almond flour, dark rum, and vanilla until smooth and spreadable.
Drain the poached pear halves thoroughly on paper towels. Place cut-side down on a cutting board and slice thinly crosswise, keeping the pear halves intact so they can be fanned out gracefully.
Spread frangipane evenly into the blind-baked pastry crust. Using a spatula, transfer each fanned pear half into the cream spoke-style like wheel spokes. Scatter sliced almonds around the pears. Bake at 375°F (190°C) for 35-40 minutes until golden brown and puffed.
Immediately upon removing the tart from the oven, brush warm apricot glaze over the warm pears and golden frangipane to seal moisture and impart an artisanal bakery shine. Allow to cool slightly and serve warm or at room temperature.
Beverage Pairing
Sauternes or Poire Williams Eau-de-Vie
A golden Bordeaux Sauternes bursting with honeyed apricot and candied citrus, or a delicate digestif of Poire Williams, highlights the floral sweetness of poached pears.
Culinary Science Insight
Lipid Expansion & Moisture Retention in Frangipane
Unlike wheat flour cakes that rely on gluten networks, almond flour frangipane gains structure through egg protein coagulation while its high unsaturated almond fat content traps steam, ensuring a moist, tender crumb that never dries out during baking.
