History & Origins

The Ebro Valley Sweet Pepper Tradition

Originating across the historic Kingdom of Aragon and the Basque borders, Chilindrón represents Northern Spain’s celebration of summer sweet peppers. Slowly sweating red and green peppers alongside cured Serrano ham creates a fragrant sofrito base that perfumes the braised chicken.

Ingredients

Braised Chicken & Pepper Sofrito Base

  • •2.5 lbs Bone-in, skin-on chicken thighs and drumsticks
  • •4 oz Jamón Serrano, cut into small thick lardons
  • •2 large Red bell peppers and 1 green bell pepper, deseeded and sliced into strips
  • •1 large Sweet Spanish onion, thinly sliced
  • •4 cloves Garlic, thinly sliced
  • •1 lb Ripe tomatoes, peeled, seeded, and finely diced
  • •1/2 cup Dry Spanish white wine (Garnacha Blanca or Rueda)
  • •3 tbsp Spanish extra virgin olive oil

Finishing, Garnishes & Chef’s Additions

  • •1/4 cup Fresh flat-leaf parsley, finely chopped
  • •1 tsp Sweet smoked Spanish pimentón de la Vera
  • •Side: Thick slices of crusty pan de pueblo (rustic Spanish bread) for dipping

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Crisp Jamón & Brown Chicken

Heat olive oil in a wide cazuela or heavy Dutch oven over medium heat. Sauté jamón lardons for 2 minutes until lightly browned; remove with a slotted spoon. Season chicken with salt, sear in the remaining oil until deeply golden on all sides, then set aside.

2
Step 2: Slow-Sweat Peppers & Sofrito

In the same pan, cook sliced onions and bell pepper strips over medium-low heat for 15 minutes until meltingly soft and fragrant. Stir in sliced garlic and smoked pimentón for 1 minute, then add diced tomatoes and cook until the liquid reduces into a jammy sofrito.

3
Step 3: Deglaze with Wine & Braise

Pour in dry white wine, scraping up all browned fond. Return chicken pieces and crisped jamón to the pan. Cover partially, lower the heat, and simmer gently for 25 minutes until the chicken reaches 165°F and the pepper sauce thickens into a glossy glaze.

4
Step 4: Rest & Garnish

Rest the dish off heat for 5 minutes to let the chicken reabsorb juices. Scatter generous fresh chopped parsley over the top and serve piping hot directly from the cazuela with crusty bread.

Beverage Pairing

Garnacha Tinto or Somontano Rosado

An earthy, red-berry-driven Aragon Garnacha or a crisp Aragonese Rosado balances the natural sweetness of caramelized peppers and cuts through the salty savoriness of Jamón Serrano.

Culinary Science Insight

Fructose Caramelization in Bell Pepper Sofrito

Slow sweating sweet bell peppers allows intracellular water to evaporate while gently caramelizing natural fructose at low heat, eliminating raw bitterness and developing complex savory sweetness.
