Authentic Cuban Picadillo (Savory Ground Beef with Olives and Raisins)
Comforting Cuban home-style ground beef simmered in a fragrant aromatic sofrito, tomato sauce, briny green Spanish olives, capers, and sweet raisins.
History & Origins
The Beloved Heart of Cuban Comida Criolla
Deriving from the Spanish verb picar (to mince), Picadillo is arguably the most nostalgic home-cooked comfort dish across Cuba. Characterized by its signature sweet-and-savory contrast (agridulce), this dish is universally enjoyed spooned over steaming white rice with sweet fried plantains.

Step-by-Step Instructions
PREPARATION & METHOD
Sauté diced onion and green pepper in olive oil until translucent. Add garlic, then brown the ground beef, breaking it into fine crumbles.
Pour in dry white wine, scraping pan drippings. Stir in tomato sauce, tomato paste, cumin, oregano, and bay leaf. Cover and simmer gently for 15 minutes.
Stir in olives, olive brine, capers, and sweet raisins. Uncover and simmer 10 minutes until glossy and thickened. Serve warm with maduros and white rice.
Beverage Pairing
Cuban Daiquiri or Cold Pale Lager
A classic crisp lime and white rum daiquiri cleanses the palate and underscores the sweet-savory notes of raisins and capers.
