Classic British Banoffee Pie (Layered Banana & Caramel Toffee Pie)
A buttery Digestive biscuit crust filled with rich slow-cooked dulce de leche toffee, layers of fresh sliced bananas, billows of soft vanilla whipped cream, and dark chocolate espresso shavings.
History & Origins
The Hungry Monk Restaurant Heritage
Invented in 1971 by Nigel Mackenzie and chef Ian Dowding at The Hungry Monk restaurant in Jevington, East Sussex. Derived as an inventive portmanteau of ‘banana’ and ‘toffee’, the dish was so wildly popular that the word ‘banoffee’ officially entered the English dictionary.
Ingredients
Crust & Caramel Toffee Core
- •250g (about 16) McVitie’s Digestive biscuits or graham crackers, finely crushed
- •100g (7 tbsp) Salted English butter, melted
- •1 can (397g) Carnation sweetened condensed milk simmered into thick dulce de leche toffee (or store-bought caramel toffee)
- •1/2 tsp Flaky Maldon sea salt (to balance caramel sweetness)
Finishing, Garnishes & Chef’s Additions
- •4 large Ripe yellow bananas, sliced into 1/4-inch coins
- •1 1/2 cups (360ml) Double cream or heavy whipping cream (chilled)
- •2 tbsp Powdered confectioner’s sugar and 1 tsp pure vanilla bean paste
- •50g 70% dark chocolate block, shaved with a vegetable peeler, and 1 pinch espresso powder
Step-by-Step Instructions
PREPARATION & METHOD
Mix crushed Digestive biscuit crumbs with melted butter. Press firmly into the base and sides of a 9-inch loose-bottom fluted tart tin using the flat bottom of a glass. Chill in the freezer for 15 minutes to set.
Whisk flaky sea salt into the thick dulce de leche toffee to cut cloying sweetness. Pour evenly over the chilled biscuit base, smoothing with an offset spatula. Return to refrigerator for 20 minutes.
Arrange sliced ripe banana coins in dense overlapping concentric circles over the toffee layer. In a chilled metal bowl, whip double cream with vanilla bean paste and powdered sugar until soft, pillowy peaks form.
Mound the whipped cream over the bananas, swirling into rustic billows with the back of a spoon. Shower generously with dark chocolate curls and a dusting of espresso powder. Chill for 1 hour before unmolding and slicing.
Beverage Pairing
Freshly Brewed Earl Grey Tea / Dark Roast Espresso
The citrusy bergamot notes of hot Earl Grey or a rich bitter espresso cut through the sweet buttery caramel and double cream layers.

Amylase Enzymatic Hydrolysis in Ripe Bananas
Selecting yellow bananas at peak ripeness ensures that natural alpha-amylase enzymes have converted resistant starch granules into sweet fructose and glucose, complementing the caramel without releasing watery weeping liquid into the crust.
