Authentic Italian Veal Piccata (Piccata di Vitello)
Paper-thin, tender veal scallopini flash-sautéed in brown butter, finished with an electric reduction of dry Italian white wine, freshly squeezed lemon juice, and briny capers.
History & Origins
Milanese Scallopini Craftsmanship
The Italian culinary term ‘piccata’ translates roughly to ‘piquant’ or ‘sharply seasoned.’ Rooted in northern Italy’s Lombardy region, this quintessential secondi piatti showcases fastidious pan control to keep delicate milk-fed veal juicy while whipping pan fond into a velvety citrus emulsion.
Ingredients
Veal Cutlets & Pan Searing
- •1 1/4 lbs Top round veal cutlets, pounded to 1/8-inch thickness
- •1/3 cup Unbleached all-purpose flour, seasoned with sea salt and white pepper
- •3 tbsp Extra virgin olive oil
- •4 tbsp Unsalted butter, cut into cold cubes
- •1/2 cup Dry Italian white wine (Pinot Grigio or Gavi)
- •1/2 cup Rich low-sodium chicken or veal stock
Finishing, Garnishes & Chef’s Additions
- •3 tbsp Nonpareil capers in brine, drained and rinsed
- •1/4 cup Fresh lemon juice (about 2 fresh lemons)
- •1 fresh Organic lemon, sliced into paper-thin wheels
- •1/4 cup Fresh flat-leaf Italian parsley, finely minced
Step-by-Step Instructions
PREPARATION & METHOD
Place veal cutlets between sheets of parchment and pound evenly to an ultra-thin 1/8 inch. Dredge lightly in seasoned flour, vigorously shaking off any excess coating.
Heat olive oil and 2 tbsp butter in a wide stainless-steel skillet over medium-high. Sear cutlets in single layers for just 90 seconds on the first side and 60 seconds on the reverse until golden; transfer immediately to a warm platter.
Pour dry white wine into the skillet, scraping up the browned pan fond with a wooden spatula. Add stock, capers, and lemon juice. Boil vigorously for 3 minutes until reduced by half.
Remove skillet from direct heat. Swirl in the remaining 2 tbsp of cold butter cubes until the sauce turns glossy and emulsified. Return veal and accumulated juices to warm through; spoon sauce and capers over top and shower with parsley.
Beverage Pairing
Gavi di Gavi DOCG / Pinot Grigio Alto Adige
A crisp, mineral-forward Piedmontese Cortese or high-altitude Pinot Grigio matches the sharp citrus acidity and briny caper bite without overpowering the delicate veal.
Culinary Science Insight
Starch Gelatinization & Cold Butter Emulsion
The trace flour dusted onto the cutlets releases amylose starch molecules into the deglazing liquid, creating a protective matrix that traps cold butter droplets into a smooth, un-broken pan sauce.
