History & Origins

Sapporo’s Winter Masterpiece

Invented in 1955 at the Aji no Sanpei stall in Sapporo, Hokkaido, miso ramen was engineered to insulate diners against bitter sub-zero winters. Wok-frying miso with pork fat and vegetables created an ultra-savory broth topped with an insulating layer of fragrant lard.

Ingredients

Wok Base & Miso Broth

  • •1/2 lb Ground pork collar
  • •5 tbsp Blend of aged red (Aka) and sweet white (Shiro) miso
  • •2 tbsp Pure Japanese pork lard (kurobuta)
  • •6 cups Rich clear pork and chicken chintan broth
  • •4 cloves Garlic, grated with 1 tbsp fresh ginger
  • •1 tbsp Toasted sesame oil and 1 tsp chili bean paste (doubanjiang)
  • •2 cups Fresh bean sprouts and shredded cabbage

Finishing, Garnishes & Chef’s Additions

  • •4 portions Fresh medium-thick curly Sapporo ramen noodles (chijire-men)
  • •8 slices Rolled braised pork belly chashu, blowtorched
  • •4 Ajitsuke Tamago (marinated soft-boiled ramen eggs), halved
  • •1/2 cup Sweet Hokkaido corn kernels and 4 pats salted Hokkaido butter
  • •1/2 cup Menma (seasoned bamboo shoots) and chopped scallions
  • •4 sheets Nori seaweed

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: High-Heat Wok Searing

Heat lard in a heavy steel wok over searing heat. Add ground pork, minced garlic, ginger, and doubanjiang; break apart rapidly until browned and fragrant with wok hei.

2
Step 2: Caramelize Miso Tare & Deglaze

Push meat to the side and drop the miso blend directly onto the searing metal surface for 15 seconds to toast sugars. Deglaze immediately with simmering stock, whisking vigorously into a rich emulsion.

3
Step 3: Flash-Cook Vegetables & Boil Noodles

Toss bean sprouts and cabbage into the boiling broth for 45 seconds to retain crisp bite. In a separate rolling pot of water, boil curly noodles for exactly 90-120 seconds; shake off all residual water.

4
Step 4: Plate with Sapporo Garnishes

Divide noodles into pre-warmed bowls and ladle piping-hot miso broth with vegetables over top. Arrange seared chashu slices, jammy seasoned egg halves, sweet corn, a pat of butter, menma, and nori.

Beverage Pairing

Sapporo Classic Draft Beer / Chilled Dry Junmai Sake

The crisp carbonation and clean malt profile of northern Japanese lager cuts through the rich pork lard and savory miso fat layer effortlessly.

Culinary Science Insight

Thermal Barrier Layer of Rendered Lard

A layer of clarified pork lard floats on the surface of the broth, forming a thermal barrier that traps steam and keeps the noodles piping hot down to the final spoonful.
