Authentic Mexican Frijoles Refritos
Silky, velvety Mexican refried pinto beans cooked from scratch with aromatic epazote, mashed and fried in fragrant rendered pork manteca with caramelized white onions, finished with crumbled queso fresco.
History & Origins
The Essential Mexican Table Keystone
In Mexican Spanish, the prefix ‘re-‘ signifies ‘thoroughly’ or ‘well’—hence frijoles refritos means ‘well-fried beans’, not beans fried twice. Traditionally prepared in a clay cazuela by mashing cooked pot beans (frijoles de la olla) in smoking lard, they form an indispensable culinary foundation.
Ingredients
Pot Beans & Sizzling Manteca
- •4 cups Cooked Mexican pinto beans (frijoles de la olla) with 1.5 cups reserved bean cooking broth
- •4 tbsp Authentic rendered pork lard (manteca de cerdo) or bacon fat
- •1 medium White onion, finely chopped
- •3 cloves Fresh garlic, minced
- •1 sprig Fresh or dried Mexican epazote
- •1 tsp Sea salt & 1/2 tsp ground Mexican cumin
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Crumbled queso fresco or aged Cotija cheese
- •1 basket Freshly fried crispy corn tortilla totopos (tortilla chips)
- •2 Pickled jalapeño chiles en escabeche on the side
- •1 tbsp Diced white onion & fresh cilantro for top garnish
Step-by-Step Instructions
Preparation & Method
Melt pork lard in a heavy cast-iron skillet or clay cazuela over medium heat until lightly shimmering. Add finely chopped white onion and cook for 6-8 minutes until deeply golden and sweet. Stir in garlic and cook 60 seconds.
Ladle cooked pinto beans into the sizzling lard along with 1/2 cup of the warm bean cooking broth and epazote. Let beans sizzle and fry vigorously in the lard for 3-4 minutes.
Using a wooden bean masher (machacador) or potato masher, thoroughly smash beans directly in the hot skillet, adding splashes of bean broth until a smooth, velvety consistency is achieved (retain slight texture if desired).
Cook mashed beans over medium-low heat, stirring constantly with a wooden spoon for 8-10 minutes, until the mixture thickens and pulls cleanly away from the bottom of the pan like a soft dough. Transfer to a warm cazuela and crown with queso fresco.
Beverage Pairing
Horchata de Arroz / Mexican Bohemia Lager
Creamy cinnamon-dusted rice horchata or a classic crisp Mexican Bohemia lager balances earthy legumes and rich savory manteca.
Culinary Science Insight
Legume Starch Gelatinization & Lipid Emulsification
Crushing cooked pinto beans ruptures cotyledon parenchyma cells, dispersing amylose starches. Continuous vigorous stirring in hot rendered lard forces fat droplets to encapsulate within the hydrated starch matrix, preventing separation and producing unmatched velvety mouthfeel.
