Authentic Thai Fish Cakes (Tod Mun Pla)

History & Origins
Bangkok’s Quintessential Street Hawker Classic
Tod Mun Pla is among Thailand’s most revered snacks, prepared across night markets and floating vendors. The dish’s hallmark is its signature ‘deng’ (bouncy/springy) texture, achieved by vigorously kneading and slapping fish paste against a mortar bowl to align myosin proteins.
Ingredients
Pounded Fish Paste & Aromatics
- •1 lb (450g) Firm white fish fillets (clown featherback, cod, or tilapia), chilled and cubed
- •3 tbsp Authentic Thai red curry paste (Prik Gaeng Daeng)
- •1 large Egg, chilled
- •1.5 tbsp Thai fish sauce (Nam Pla) & 1 tsp palm sugar
- •6 fresh Makrut kaffir lime leaves, deveined and sliced into hairline threads
- •1/2 cup Chinese yardlong beans (or green beans), sliced into thin rounds
- •2 cups Neutral high-heat oil for deep frying
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Thai sweet chili sauce mixed with 1 tbsp rice vinegar
- •1/2 cup Persian cucumber, quartered and finely sliced into relish
- •2 tbsp Roasted peanuts, crushed & 1 shallot finely diced
- •1 cup Fresh Thai holy basil leaves, flash-fried crispy for garnish
Step-by-Step Instructions
Preparation & Method
Place chilled fish cubes in a food processor with egg, red curry paste, fish sauce, and palm sugar. Pulse until completely smooth and very thick and tacky.
Transfer paste to a large mixing bowl. Pick up handfuls of paste and vigorously slap it down into the bowl for 3-4 minutes to develop a signature elastic bounce. Fold in sliced kaffir lime leaves and yardlong bean rounds.
Heat oil in a wok to 340°F (170°C). With wet hands, scoop 2 tablespoons of paste and flatten into 2-inch discs. Slide gently into hot oil. Fry in batches for 3-4 minutes, turning occasionally until puffed and deep amber-brown. Drain on wire racks.
Combine sweet chili sauce, rice vinegar, diced shallots, and sliced cucumbers in a bowl; top with crushed peanuts. Serve fish cakes immediately garnished with crispy fried basil leaves.
Beverage Pairing
Singha Thai Lager / Off-Dry German Riesling
An ice-cold Thai Singha beer or a chilled Mosel Riesling with residual sweetness cools red curry heat and matches citrusy makrut lime oil.
Culinary Science Insight
Myosin Extraction & Surimi Cross-Linking
Mechanical pounding in the presence of salt dissolves myofibrillar myosin proteins into a sticky sol. Upon rapid hot-oil immersion, these proteins cross-link into a resilient three-dimensional elastic gel network that delivers characteristic bouncy springiness.
