History & Origins
Piedmontese Elegance and Dairy Mastery
Originating in the Langhe hills of Piedmont, Italy, Panna Cotta translates literally to ‘cooked cream’. Historically prepared with fish bone collagen and natural mountain dairy, modern Italian pastry chefs perfected its iconic gentle tremor using premium cream and vanilla.
Ingredients
Vanilla Custard Base
- •2 cups Heavy whipping cream (36% butterfat)
- •1/2 cup Whole dairy milk
- •1/3 cup Granulated superfine sugar
- •1 whole Bourbon vanilla bean, split lengthwise and caviar scraped
- •2 1/4 tsp Unflavored powdered gelatin (or 3 gold sheet leaves)
- •3 tbsp Cold water for blooming gelatin
Finishing, Garnishes & Chef’s Additions
- •10 oz Fresh wild raspberries
- •3 tbsp Powdered confectioner’s sugar
- •1 tsp Freshly squeezed lemon juice
- •6 sprigs Tender baby mint leaves
Step-by-Step Instructions
Preparation & Method
Sprinkle gelatin evenly over cold water in a small ramekin. Let sit undisturbed for 5-10 minutes until spongy and fully hydrated.
Combine heavy cream, milk, sugar, and scraped vanilla caviar with the pod in a saucepan over medium heat. Warm until steaming and sugar completely dissolves (do not boil). Remove from heat and steep 10 minutes.
Remove vanilla pod. Whisk bloomed gelatin into warm cream until completely dissolved. Strain through a fine-mesh sieve into 6 ramekins or dariole molds. Chill in refrigerator for at least 4-6 hours until gently set with a soft wobble.
Puree fresh raspberries, confectioner’s sugar, and lemon juice in a blender; strain seeds out through a fine sieve. Dip ramekins in warm water for 5 seconds to unmold onto dessert plates. Drizzle glossy coulis and garnish with mint.
Beverage Pairing
Moscato d’Asti / Brachetto d’Acqui
A sparkling, lightly effervescent Piedmontese Moscato d’Asti or ruby-red Brachetto complements rich cream with delicate stone-fruit acidity.
Culinary Science Insight
Gelatin Network Matrix & The ‘Tremblement’
Gelatin creates a thermo-reversible cross-linked polymer network that traps liquid cream. The ideal culinary ratio of 1 sheet per 100ml dairy yields a delicate structural melt point at human body temperature (98.6°F).
