Authentic Persian Tahchin-e Morgh (Crispy Baked Saffron Rice Cake with Spiced Shredded Chicken & Barberries)
Persia’s golden architectural rice cake of parboiled basmati rice bound with Greek yogurt, egg yolks, and saffron, layered with tender braised chicken and crowned with ruby barberries.
History & Origins
Qajar Dynasty Banqueting Architecture
Developed in royal Persian palaces during the Qajar period, Tahchin transforms Iran’s prized saffron tahdig crust into a standalone cake, combining yogurt custard and tender saffron-braised chicken.

Saffron Basmati Custard & Braised Chicken
- •3 cups Long-grain Persian basmati rice, soaked in salted water
- •1.5 lbs Boneless skinless chicken thighs, poached and shredded
- •1.5 cups Whole milk Greek yogurt (plain, unflavored)
- •3 large Egg yolks
- •1/2 tsp High-grade Persian saffron threads, bloomed in 4 tbsp hot water
- •1/2 cup Melted unsalted butter and 3 tbsp neutral oil
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Dried Persian barberries (zereshk), sautéed with 1 tsp sugar and butter
- •1/4 cup Slivered pistachios and toasted almond slivers
- •1 tbsp Rose water for sautéing barberries
Step-by-Step Instructions
PREPARATION & METHOD
Boil soaked basmati rice in salted water for 6-7 minutes until grains are tender on the outside with a firm core. Drain and rinse gently with cool water.
Whisk Greek yogurt, egg yolks, bloomed saffron liquid, half the melted butter, oil, and salt. Gently fold the parboiled rice into the saffron yogurt mixture.
Grease a baking dish generously. Press half the rice firmly into the bottom. Layer shredded chicken and half the sautéed barberries in the center, then pack the remaining rice over top.
Cover with foil and bake at 375°F (190°C) for 75-80 minutes until the edges are deep amber. Invert onto a serving platter and garnish with barberries and pistachios.
Beverage Pairing
Doogh (Mint Yogurt Cooler) / Viognier
A chilled Persian yogurt drink sparkling with dried mint and club soda, or an aromatic Viognier, complements floral saffron and tart barberries.
