Ingredients
Red Lentils & Sun-Dried Berbere Base
- •1.5 cups Split red lentils (misir), rinsed until water runs clear
- •3 large Red onions, very finely minced into paste
- •3.5 tbsp Authentic Ethiopian berbere spice blend
- •1.5 tbsp Garlic-ginger paste
- •3.5 cups Water or vegetable broth
Finishing, Garnishes & Chef’s Additions
- •3 tbsp Niter kibbeh (Ethiopian spiced clarified butter) or vegetable oil for vegan
- •1/2 tsp Ground korarima (Ethiopian black cardamom)
- •Warm Teff injera flatbread for serving
Step-by-Step Instructions
PREPARATION & METHOD
Place pureed red onions in a dry heavy pot over medium heat. Cook without oil for 15 minutes, stirring continuously until excess moisture evaporates and onions sweeten.
Add niter kibbeh and berbere spice blend. Sauté for 6-8 minutes over medium-low heat, splashing with a tablespoon of water to prevent scorching.
Stir in garlic-ginger paste, rinsed red lentils, and 3.5 cups water. Bring to a gentle boil, lower heat, cover, and simmer for 25 minutes until lentils break down.
Stir in ground korarima and an extra tablespoon of niter kibbeh. Whisk until the stew forms a velvety, rich crimson porridge. Serve hot over spongy injera.
Beverage Pairing
Ethiopian Tej (Honey Wine) / Syrah
Slightly sweet Ethiopian Tej honey wine cools the tongue against fiery berbere heat while complementing caramelized onion sweetness.
Culinary Science Insight
Dry Allium Pyrolysis & Capsaicin Extraction
Sweating onions dry prior to fat addition concentrates sulfurous alliin into sweet fructans, which buffer fat-soluble capsaicin from the dry-roasted berbere.
