Step-by-Step Instructions
PREPARATION & METHOD
Simmer chopped onions, tomatoes, and soaked cashews in 1.5 cups water for 12 minutes until soft. Cool and blend into an ultra-smooth puree, then strain through a fine sieve into a bowl to discard seeds and skin fragments.
Melt 3 tablespoons ghee in a heavy kadai or saucepan over medium heat. Add green cardamoms, black cardamom, cinnamon, cloves, and bay leaf until crackling and fragrant. Stir in ginger-garlic paste for 60 seconds.
Pour the strained cashew-tomato puree into the spiced ghee. Add Kashmiri red chili, coriander, turmeric, and 1 teaspoon salt. Simmer covered on low heat for 10 minutes until ghee releases at the surface. Pour in bloomed saffron milk and fresh cream.
Gently slide paneer cubes into the simmering sauce. Cook on gentle low heat for 4-5 minutes so paneer absorbs the gravy without hardening. Sprinkle with crushed kasuri methi and shahi garam masala, finish with a swirl of cream, and serve warm.
Beverage Pairing
Sweet Mango Lassi / Gewürztraminer
A chilled creamy Alphonso mango lassi mirrors the luxurious cashew cream texture, while an aromatic Alsatian Gewürztraminer with floral lychee notes pairs beautifully with saffron and cardamom.
Culinary Science Insight
Cashew Emulsion Stabilization & Non-Melting Casein Matrix
Paneer is an acid-set cheese whose crosslinked casein protein matrix does not melt when exposed to cooking temperatures. Pureed cashews introduce natural phospholipids and fine starch granules that form an indestructible emulsion with butterfat in ghee and heavy cream, preventing sauce separation.
