Authentic Mexico City Suadero Tacos
The quintessential Mexico City street taco: beef rose meat slowly confited in aromatic pork lard and citrus juices until meltingly tender, then crisped on a hot comal and served on double warm corn tortillas with salsa verde.
History & Origins
The Holy Grail of CDMX Taquerías
Suadero is unique to Mexico City (CDMX). Originating from the cut between the belly and leg of beef (rose meat / brisket navel), street taqueros confit the meat in convex stainless-steel comales filled with bubbling manteca (pure lard) for hours before slicing and searing on order.

Beef Rose Meat & Aromatic Confit

- •1 lb (450g) Pure rendered pork lard (manteca)
- •1 cup Whole milk and 1 cup water

- •1 medium White onion, quartered, and 6 cloves garlic, smashed
- •3 Bay leaves and 1 tbsp coarse Mexican sea salt
Finishing, Garnishes & Chef’s Additions

Step-by-Step Instructions
PREPARATION & METHOD
In a heavy Dutch oven, melt pure pork lard with milk, water, orange halves and juice, quartered onion, garlic cloves, bay leaves, and coarse salt. Submerge the beef suadero slabs completely in the liquid.
Bring to a gentle simmer, cover tightly, and simmer over low heat (or in a 300°F / 150°C oven) for 2.5 to 3 hours until the meat is completely tender and yields easily when pierced with a fork. Remove meat to a cutting board.
Chop the tender beef into small, juicy dice using a heavy cleaver. Heat a cast-iron skillet or comal to high with 2 tablespoons of hot rendered confit lard. Flash-sear chopped meat for 2 minutes until exterior edges turn deeply caramelized and crispy.
Dip double corn tortillas into hot fat and warm on the comal until pliable. Pile high with crispy seared suadero, sprinkle generously with minced raw onion and cilantro, squeeze fresh lime juice over top, and spoon on spicy salsa verde.
Beverage Pairing
Michelada Clásica / Mexican Coca-Cola (Cane Sugar)
A spicy, salted-rim Michelada packed with lime and Clamato cuts through the rich pork lard confit, while an ice-cold Mexican Coke delivers fizzy effervescence.
Culinary Science Insight
Dual-Phase Confit-Sear & Elastin Gelatinization
The rose meat (cutaneous trunci) has dense elastic connective tissue that remains tough under standard grilling. Long sub-boiling confit in manteca hydrolyzes elastin and collagen into gelatin. The subsequent high-heat comal sear evaporates surface water, creating crisp Maillard crusts while locking gelatin within.
