Authentic Neapolitan Baba al Rum
Naples’ iconic mushroom-shaped yeast sponge cake, baked golden brown and steeped thoroughly in an aromatic citrus and dark Jamaican rum syrup, glazed with apricot jam and filled with whipped vanilla panna.
History & Origins
From Polish Kings to Neapolitan Pasticcerie
Originally created in Lorraine for exiled Polish King Stanisław Leszczyński and refined by Parisian pastry chefs, the Babà achieved ultimate legendary glory in Naples when Neapolitan “monsù” chefs adopted it in the 19th century, making it the undisputed symbol of Neapolitan pastry art.

Step-by-Step Instructions
PREPARATION & METHOD
In a stand mixer fitted with dough hook, combine flour, sugar, dissolved yeast, and salt. Add eggs one at a time, kneading for 10 minutes until elastic. Gradually incorporate softened butter until shiny, smooth, and clinging to hook.
Butter 8 traditional fluted babà molds. Pipe dough half-full, cover loosely, and proof in a warm spot until dough crowns 1/2-inch over rim (45 minutes). Bake at 375°F (190°C) for 20-25 minutes until deeply golden and dry. Unmold and cool completely.
Boil water, sugar, and citrus peel for 10 minutes; cool to warm (110°F/43°C), then stir in dark rum. Submerge cooled babà cakes in the warm syrup for 2-3 minutes, gently squeezing and releasing so they drink the liquid like natural sponges. Drain on a rack.
Brush gleaming babà with warm apricot jam for mirror shine. Slit down center, pipe with generous swirls of chantilly cream, and crown with an Italian candied Amarena cherry. Chill for 1 hour before serving.
Beverage Pairing
Neapolitan Espresso / Limoncello di Sorrento
A dark, bitter Neapolitan espresso balances the sweet, boozy rum syrup, while chilled Sorrento limoncello enhances the citrus zest infused within the crumb.
Culinary Science Insight
High-Strength Gluten Network & Capillary Action
Using high-protein Manitoba flour develops an extraordinarily elastic gluten mesh capable of trapping large carbon dioxide alveoli. When baked thoroughly dry, these hollow cells draw in warm alcohol-sugar syrup via capillary action without disintegrating or becoming soggy.
