Step-by-Step Instructions
Preparation & Method
Heat olive oil in a skillet over medium-low heat. Cook sweet onions and bell peppers slowly for 20 minutes until sweet and tender. Stir in paprika and crushed tomatoes for 5 minutes. Strain through a fine sieve, saving flavored oil for dough.
In a large bowl, whisk flour, yeast, and salt. Pour in lukewarm water and 1/2 cup of reserved sofrito oil. Knead for 7 minutes until silky and elastic. Cover with towel and rest 30 minutes.
Roll half the dough out onto baking sheet. Fold flaked bonito tuna and chopped boiled eggs into cooled sofrito, spreading evenly over crust. Roll top dough over filling, crimp edges into decorative rope twists, and cut a round vent in center.
Brush crust liberally with egg wash and sprinkle with flaky sea salt. Bake at 390°F (200°C) for 35-40 minutes until deeply bronzed and fragrant. Cool on rack for 15 minutes before slicing.
Beverage Pairing
Galician Albariño (Rías Baixas) / Dry Mencía
Crisp, saline Albariño from the Galician coast mirrors the Atlantic tuna and balances sweet caramelized onions with zesty green apple acidity.
