Authentic Catalan Escalivada (Charred Smoky Eggplant, Bell Peppers, and Onions in Olive Oil)
Whole eggplants, sweet red bell peppers, and sweet onions charred directly over open embers until blistered and tender, stripped into ribbons and dressed in fruity Catalan olive oil and aged sherry vinegar.
History & Origins
The Ember-Roasted Soul of Catalonia
Deriving from the Catalan verb ‘escalivar’ (to roast in hot ashes), Escalivada is an ancestral rural dish where summer garden harvests were placed directly onto wood coals during evening vineyard barbecues.
Ingredients
Ember-Charred Mediterranean Vegetables
- •2 medium Globe eggplants (berenjenas), kept whole
- •2 large Red bell peppers (pimientos rojos), kept whole
- •2 medium Sweet Spanish yellow onions, skins on
- •2 medium Ripe plum tomatoes, whole
- •1/3 cup Premium Catalan Arbequina extra virgin olive oil and 2 cloves garlic, sliced thin
Finishing, Garnishes & Chef’s Additions
- •8 fillets Cantabrian salt-cured anchovies in olive oil (anxoves de l’Escala)
- •1 tbsp Aged Jerez sherry vinegar
- •Pinch Flaky sea salt (Flor de Sal) and freshly cracked black pepper
- •4 slices Grilled rustic sourdough bread rubbed with tomato (Pa amb Tomàquet)
Step-by-Step Instructions
Preparation & Method
Place whole eggplants, bell peppers, and onions directly over open gas burner flames or onto a baking sheet under a 450°F (230°C) oven broiler. Turn occasionally for 35-45 minutes until skins are completely black and blistered and flesh collapses softly.
Transfer the charred hot vegetables immediately into a large bowl and seal tightly with plastic wrap or a kitchen towel. Let steam for 15 minutes; trapped residual steam will loosen skins effortlessly from the silky sweet vegetable flesh.
Peel off the blackened skins, stems, and seeds under fingers (never rinse under water, which washes away precious smoky juices). Tear or slice eggplant, peppers, and onions into long, elegant 1/2-inch ribbons.
Arrange ribbons alternating across a ceramic platter. Scatter slivered garlic on top. Drizzle generously with Arbequina olive oil and sherry vinegar, season with flaky sea salt, and drape savory Cantabrian anchovy fillets across the top. Serve with Pa amb Tomàquet.
Beverage Pairing
Catalan Priorat Red or Chilled Penedès Cava Brut
Crisp sparkling Cava cleanses rich olive oil and briny anchovies, while a mineral-driven Priorat garnacha mirrors the smoky sweet character of charred eggplant.
Culinary Science Insight
Pyrolysis Smoke Infusion & Pectin Softening
High-heat skin blistering creates lignin pyrolysis, generating guaiacol and syringol smoke compounds that migrate directly into the softening vegetable pectins beneath the epidermis.
