History & Origins
Chuncheon Myeongdong Alley & Student Pub Culture
Emerging in the late 1960s in the lakeside city of Chuncheon, dakgalbi was nicknamed ‘commoner’s galbi’ or ‘university student’s galbi’ because it provided the hearty luxury of marinated grilled ribs at an affordable price, quickly turning Chuncheon into a nationwide culinary pilgrimage site.

Step-by-Step Instructions
PREPARATION & METHOD
In a large bowl, whisk gochujang, gochugaru, soy sauce, mirin, grated pear, minced garlic, minced ginger, and 1 tablespoon brown sugar. Add chicken thigh strips and toss thoroughly to coat. Refrigerate for at least 30 minutes.
Heat a wide round cast-iron pan or flat griddle over medium-high heat with 2 tablespoons cooking oil. Arrange chopped green cabbage and sweet potato slices across the base, then mound the marinated spicy chicken in the center.
Using two large spatulas, vigorously toss and flip the chicken and vegetables for 8 to 10 minutes. Fold in soaked tteokbokki rice cakes and continue stir-frying until chicken is cooked through, sweet potatoes are tender, and sauce caramelizes into a glossy coating.
Toss in shredded perilla leaves and drizzle toasted sesame oil. Part the dakgalbi down the middle to form a trench; scatter shredded mozzarella into the center, cover for 2 minutes until molten and stretchy. Dip spicy chicken through the cheese river before eating.
Beverage Pairing
Chilled Makgeolli (Korean Sparkling Rice Wine) or Soju
A bowl of fizzy, lightly sweet milky makgeolli coats the tongue against chili heat, while clean soju cuts through the rich melted cheese and savory gochujang paste.
Culinary Science Insight
Proteolytic Pear Enzymes & High-Starch Griddle Caramelization
Korean pear contains natural calpain-like proteolytic enzymes that tenderize chicken muscle fibers during marination. Starch released from simmering sweet potatoes and tteokbokki rice cakes emulsifies with gochujang and poultry fats to produce a sticky glaze.
