Authentic Philadelphia Cheesesteak (Thinly Sliced Ribeye, Caramelized Onions, and Melted Provolone on Crusty Amoroso Roll)
The iconic South Philadelphia flat-top marvel—paper-thin shaved well-marbled beef ribeye chopped with sweet griddled onions, enveloped in melting sharp provolone on a crusty Amoroso roll.
History & Origins
South Philadelphia Italian Market Heritage
Created in 1930 by hot dog vendors Pat and Harry Olivieri in South Philadelphia, the cheesesteak was born when a passing taxi driver smelled grilled beef on an Italian roll and urged them to sell it. The addition of melted provolone perfected an American icon.

Step-by-Step Instructions
PREPARATION & METHOD
Heat beef tallow or oil on a large cast-iron flat-top griddle over medium heat. Add diced onions with a pinch of salt, cooking for 8 to 10 minutes while tossing frequently until soft, golden, and translucent; push to cooler edge of griddle.
Crank flat-top to high heat (400°F). Drop shaved ribeye onto sizzling surface in a single layer. Let sear undisturbed for 60 seconds, season generously with salt and pepper, then use two metal spatulas to rapidly chop and flip steak slices into bite-sized ribbons.
Toss caramelized onions into the sizzling chopped steak. Form meat into an oblong pile matching the exact length of the roll. Lay 2 overlapping slices of sharp provolone over the steak pile, allowing steam to melt cheese into meat crevice.
Split Amoroso roll three-quarters through; open and invert face-down over the melting cheese-covered steak pile. Slide spatula beneath the meat and roll together, flipping upright in one swift motion. Wrap tightly in butcher paper for 2 minutes before serving.
Beverage Pairing
Pennsylvania Lager (Yuengling) or Dr. Brown’s Black Cherry Soda
An ice-cold amber lager from America’s oldest brewery provides malt sweetness and crisp carbonation to slice through rich ribeye fat, or enjoy with classic nostalgic black cherry soda.
Culinary Science Insight
High-Surface Maillard Browning & Steam Envelopment
Partially freezing ribeye allows slicing paper-thin (1-2mm), maximizing surface-area-to-mass ratio for rapid Maillard reaction without overcooking the meat. Inverting the roll over melting cheese traps rising steam to soften the roll interior while keeping crust crisp.
