History & Origins

The Three ‘Vuelcos’ Ritual of Castilian Dining

Deriving from medieval Sephardic Jewish adafina, Cocido Madrileño grew into the ultimate culinary emblem of the Spanish capital. Served in ‘tres vuelcos’—first the broth with fine fideo noodles, second the chickpeas and vegetables, and third the rich stewed meats.

Ingredients

Stewed Meats & Chickpea Foundation

  • •1 lb Dried Spanish chickpeas (Garbanzos de Fuentesaúco), soaked overnight in salted water
  • •1.5 lbs Beef shank or morcillo
  • •10 oz Fresh pork belly (Tocino fresco) and 1 cured Jamón serrano bone
  • •2 links Authentic Spanish chorizo sausage and 2 links Spanish blood sausage (Morcilla de Burgos)
  • •1/2 head Savoy cabbage, coarsely shredded
  • •3 medium Yukon gold potatoes and 3 large carrots, peeled and halved

Finishing, Garnishes & Chef’s Additions

  • •1 cup Fine fideo pasta noodles (cooked directly in strained golden broth for first course)
  • •3 cloves Garlic sautéed in olive oil with sweet Spanish pimentón (for dressing cabbage)
  • •1 small bowl Pickled Basque piparra peppers for acid contrast

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Start Meat Broth & Skim Impurities

In a tall 10-quart stockpot, place beef shank, jamón bone, and pork belly with 5 quarts of cold water. Bring to a gentle boil, meticulously skimming away all grayish foam for 20 minutes to yield a crystalline broth.

2
Step 2: Add Chickpeas in Cooking Net

Place drained soaked chickpeas into a mesh cooking net (malla) and lower into the bubbling pot. Reduce heat to low, cover, and simmer gently for 2 hours until chickpeas begin to turn buttery soft.

3
Step 3: Simmer Vegetables & Sausages

Add peeled potatoes, carrots, and chorizo. In a separate pot, cook cabbage and morcilla in a few ladles of the rich broth to preserve the clear color of the main pot. Sauté drained cabbage with garlic and pimentón.

4
Step 4: Present in Three Traditional ‘Vuelcos’

Strain hot broth into a pot and boil fideos for 3 minutes (Course 1). Platter the tender chickpeas with potatoes, carrots, and cabbage (Course 2). Carve and arrange the beef, pork belly, chorizo, and morcilla on a grand platter (Course 3).

Beverage Pairing

Vinos de Madrid Garnacha or Ribera del Duero Crianza

A vibrant, medium-bodied Garnacha from the Gredos mountains of Madrid or an oak-kissed Ribera del Duero cuts cleanly through the intense gelatin and fats of the stewed meats.

Culinary Science Insight

Thermal Legume Gelatinization & Hard Water Chemistry

Madrid’s exceptionally soft mountain water prevents calcium and magnesium ions from binding with chickpea pectin, allowing the legumes to cook into a luscious, butter-like interior texture without rupturing skins.
