History & Origins

Haute-Savoie Après-Ski Classic

Deriving from the Franco-Provençal word for potato (tartiflâ), Tartiflette was popularized in the 1980s by the Union Interprofessionnelle du Reblochon in the French Alps to promote their legendary AOC raw-milk mountain cheese.

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Parboil Potatoes & Crisp Lardons

Boil unpeeled waxy potatoes in salted water for 15-18 minutes until tender; cool, peel, and slice into 1/4-inch rounds. In a large skillet, render diced smoked lardons over medium heat until crisp.

2
Step 2: Deglaze with Savoie Wine

Add sliced onions to the skillet drippings and cook for 10 minutes until golden and sweet. Pour in the Savoie white wine, scraping all caramelized bits from the bottom, and simmer until reduced by half. Stir in crème fraîche.

3
Step 3: Layer Potatoes & Crown with Reblochon

Rub a ceramic gratin dish with the cut garlic clove. Layer half the sliced potatoes, top with bacon and onions, add remaining potatoes, and pour over any pan juices. Place the two Reblochon disc halves crust-side up directly over the top.

4
Step 4: Bake Until Bubbling & Golden

Bake in a 400°F (200°C) oven for 20-25 minutes until the Reblochon melts completely into the potato crevices and the crust turns blistered and bubbling golden brown. Rest for 5 minutes before serving with green salad.

Beverage Pairing

Vin de Savoie (Jacquère / Apremont)

A crisp, alpine Savoie white made from Jacquère grapes delivers bracing acidity to cut through the heavy melted cow’s milk cheese and bacon fat.

Culinary Science Insight

AOP Reblochon Casein Melting & Rind Cracking

Placing Reblochon rind-side up allows the washed rind’s brevibacterium layer to crisp and toast while protecting the high-moisture casein interior as it liquefies into the potato starch matrix.
