Classic French Blanquette de Veau (Velvety Veal Ragout with Pearl Onions and Button Mushrooms in Lemon Cream Sauce)
Tender cubes of veal shoulder poached in aromatic mirepoix broth without browning, enveloped in an ivory liaison of egg yolk, crème fraîche, tender buttered mushrooms, and sweet pearl onions.
History & Origins
The Pillar of French Bourgeois Cookery
Recorded in 18th-century French culinary manuals, Blanquette gets its name from “blanc” (white), deliberately avoiding browning the meat. Codified by Escoffier, it represents Sunday family dining in France at its most comforting and refined.

Step-by-Step Instructions
PREPARATION & METHOD
Place veal in a Dutch oven, cover with cold water, and bring to a boil for 2 minutes to coagulate surface proteins. Drain and rinse meat thoroughly to keep the stew pristinely pale and clear.
Return rinsed veal to the pot with fresh water/stock, clove-studded onion, carrots, leek, celery, and bouquet garni. Simmer gently uncovered at 190°F (88°C) for 1 hour 15 minutes until veal yields to a knife tip. Strain stock.
Melt butter in a saucepan, whisk in flour for 2 minutes without coloring (white roux), then gradually ladle in 3 cups hot strained veal broth until a velvety velouté forms. Add the poached veal, glazed pearl onions, and cooked mushrooms.
Whisk egg yolks, crème fraîche, and lemon juice together. Temper with a ladle of hot sauce, then stir back into the pot over low heat. Cook for 2 minutes without boiling until sauce coats the spoon like silk. Serve over buttered rice pilaf.
Beverage Pairing
White Burgundy (Chablis / Meursault)
A crisp, mineral-forward Chablis or buttery Meursault complements the delicate lemon cream liaison without overpowering young veal.
Culinary Science Insight
Liaison Emulsification & Sub-Coagulation Temperature
Egg yolk lecithin acts as an emulsifier between cooking broth and dairy butterfat; the sauce must be held strictly below 180°F (82°C) to prevent ovalbumin protein curdling.
