History & Origins

Tłusty Czwartek Carnival Feasting

Dating back to the Middle Ages in Poland, pączki reached their peak celebration on Tłusty Czwartek (Fat Thursday), the final Thursday before Lent. Confectioners in Warsaw and Krakow enriched the dough with abundant butter, cream, and egg yolks to consume rich winter reserves.

Ingredients

Enriched Yeast Dough & Rose Petal Filling

  • •4 cups (500g) All-purpose flour, sifted
  • •6 large Egg yolks beaten with 1/2 cup granulated sugar until pale ribbons form
  • •1 cup Whole milk, lukewarm (105°F / 40°C)
  • •1 packet (7g) Active dry yeast bloomed in milk
  • •1/2 cup (115g) European unsalted butter, melted and cooled
  • •2 tbsp Polish spirytus (or grain alcohol / rum) to prevent oil absorption
  • •1 cup Authentic wild rose hip jam (konfitura z róży)

Finishing, Garnishes & Chef’s Additions

  • •1.5 cups Confectioners’ sugar whisked with 3 tbsp warm water and lemon juice (lukier glaze)
  • •3 tbsp Fine candied orange peel (skórka pomarańczowa), diced
  • •Oil for Frying Pure lard (smalec) or high-smoke-point oil for authentic fry

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Knead Rich Brioche Dough & First Rise

Bloom yeast in warm milk. Beat yolks with sugar until pale, then combine with flour, yeast mixture, and spirytus. Gradually knead in melted butter until dough is glossy and elastic. Cover and rise in a warm place for 1.5 hours until doubled.

2
Step 2: Shape Rounds & Second Proof

Gently punch down dough, roll out to 3/4-inch thickness, and cut 3-inch rounds with a floured cutter. Place onto floured baking sheets, cover with a tea towel, and proof for 30 minutes until puffy and pillowy.

3
Step 3: Deep Fry to Golden with White Collar

Heat frying lard or oil to 350°F (175°C). Fry pączki in batches covered for 2 minutes on the first side, flip uncovered for 2 minutes on the second side. A distinct white equatorial ring (‘obrączka’) around the middle marks authentic light proofing. Drain on paper towels.

4
Step 4: Pipe Rose Jam & Orange Glaze

Fit a piping bag with a long Bismarck nozzle, insert into the side of warm pączki, and inject 1 generous tablespoon of wild rose jam into each. Brush tops with lukewarm citrus glaze and scatter candied orange peel.

Beverage Pairing

Strong Black Coffee / Polish Herbata with Lemon

A dark, bold roast espresso or fragrant black tea with lemon cuts through fried butter sweetness and lifts wild rose aromatics.

Culinary Science Insight

Alcohol Vaporization & Oil Repulsion Barrier

Adding high-proof spirytus lowers dough water activity and vaporizes rapidly upon hitting hot oil, creating outward gas pressure that prevents fat penetration.
