Authentic Italian Spaghetti alla Nerano (Amalfi Coast Spaghetti with Crispy Zucchini and Provolone del Monaco)
Bronze-die spaghetti vigorously tossed with thinly sliced olive-oil fried zucchini, starchy cooking water, fresh sweet basil, and semi-aged spicy Provolone del Monaco into a glossy, velvety emulsion.
History & Origins
Amalfi Coast Seaside Trattorias
Invented in 1952 by restaurant owner Maria Grazia in the sleepy seaside fishing hamlet of Nerano on the Sorrento Peninsula, this pasta dish achieved legendary cult status by demonstrating how frying common garden zucchini transforms simple pantry staples into pure Italian gastronomy.

Finishing, Garnishes & Chef’s Additions
- •1.5 cups (150g) Authentic Provolone del Monaco DOP, finely microplaned (or caciocavallo / aged provolone)

- •1 cup Starchy salted pasta cooking water reserved before draining
Step-by-Step Instructions
PREPARATION & METHOD
Heat olive oil in a wide skillet over medium heat. Fry sliced zucchini in batches for 5 to 6 minutes until deeply golden brown. Transfer with a slotted spoon to a bowl lined with paper towels, toss with fresh torn basil, and allow to rest for 2 hours (or overnight) to soften.
Drop spaghetti into a pot of rolling salted boiling water. Cook for 2 minutes less than the package instructions, keeping the pasta firm and toothsome. Ladle out 1 cup of cloudy pasta cooking water.
In a large sauté pan, heat crushed garlic and butter with 3 tablespoons of zucchini frying oil. Discard garlic, add the fried zucchini and a splash of pasta water, mashing a quarter of the zucchini with a wooden spoon to create a coarse paste. Toss in the al dente pasta and swirl vigorously.
Pull pan completely off the heat. Sprinkle in grated Provolone del Monaco, Parmigiano, and remaining torn basil. Swirl and toss rapidly with a splash of hot pasta water until a creamy, glossy emulsion coats every strand of pasta.

Culinary Science Insight
Thermal Cheese Mantecatura & Starch Bonding
Provolone del Monaco contains semi-aged caseins that coagulate if boiled. Performing the mantecatura off-heat at ~140°F (60°C) with starchy pasta water forms a stable silk emulsion without stringing.
