Traditional Turkish Künefe (Crispy Kadayif Shredded Pastry with Stretchy Melted Cheese and Pistachios)
Crisp, butter-toasted shredded kadayıf pastry enclosing molten stretchy unsalted cheese, soaked in warm citrus sugar syrup and showered with vibrant Gaziantep pistachios.
History & Origins
Hatay Levantine Heritage
Hailing from Antakya (Hatay province) along Turkey’s southern Mediterranean border, Künefe represents centuries of Levantine culinary synthesis, prepared traditionally in circular shallow copper pans (künefe tepsisi) over glowing charcoal embers.
Ingredients
Crispy Kadayif Base & Melty Cheese Core
- •8 oz (250g) Fresh shredded kadayıf pastry dough, finely chopped
- •6 tbsp Clarified butter (ghee), melted and cooled
- •1 tbsp Grape molasses (pekmez) rubbed into the pan for deep amber color
- •8 oz Unsalted fresh melting cheese (Hatay künefe cheese, or fresh sweet mozzarella)
- •1 cup Granulated sugar and 1 cup water
- •1 tsp Fresh lemon juice and 1 tsp rosewater
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Bright emerald Turkish Antep pistachios, finely ground
- •2 tbsp Turkish clotted cream (kaymak) or thick mascarpone
- •A few Edible dried organic rose petals
Step-by-Step Instructions
PREPARATION & METHOD
Combine sugar and water in a saucepan over medium heat. Bring to a gentle boil, stir until sugar dissolves completely, then simmer for 10 minutes. Stir in lemon juice and rosewater; remove from heat to cool to lukewarm.
Toss chopped kadayıf dough thoroughly with melted clarified butter until every strand is coated. Grease an 8-inch pan with butter and molasses. Press half the pastry firmly into the base, cover with sliced cheese leaving 1/2-inch border, and press remaining pastry firmly on top.
Cook over low stovetop heat, rotating the pan continuously for 7 to 9 minutes until the underside is deep amber and crispy. Invert onto a flat plate, butter the pan again, slide künefe back in, and cook the second side for 6 to 8 minutes until cheese melts entirely.
Immediately pour cooled citrus syrup over the sizzling hot pastry, allowing it to hiss and absorb. Scatter ground Antep pistachios across the center, add a dollop of kaymak cream, and slice immediately while hot and stretchy.
Beverage Pairing
Turkish Black Tea (Çay) / Cold Whole Milk
Robust Turkish black tea served in a traditional tulip glass cuts through caramelized butter and fragrant sweet syrup.
Culinary Science Insight
Differential Syrup Temperature Absorption
Pouring room-temperature sugar syrup onto scalding hot, freshly pan-fried pastry causes the starch matrix to rapidly soak up moisture without sogginess, locking in shattering crispiness.
