Step-by-Step Instructions
PREPARATION & METHOD
Toast ground walnuts in a dry heavy pot for 2 minutes until fragrant. Gradually pour in 2.5 cups of cold water. Simmer covered over low heat for 35 minutes, occasionally adding an ice cube to thermal-shock the walnuts into releasing their natural oil.
In a separate skillet, brown grated onions in a splash of oil until translucent and golden. Season chicken pieces with sea salt and turmeric, sear lightly on both sides for 3 minutes, and set aside.
Stir pomegranate molasses, sugar, cinnamon, sautéed onions, and chicken into the walnut sauce. Simmer gently uncovered over low heat for 35 to 40 minutes, stirring frequently so the thick walnut base does not stick, until the sauce turns glistening chocolate-brown.
Ladle the velvety stew into a wide ceramic bowl, scatter vibrant red fresh pomegranate arils and emerald pistachios over the top, and serve piping hot alongside saffron rice.
Beverage Pairing
Shiraz / Doogh (Persian Mint Yogurt Drink)
A spicy Rhône Syrah echoes the rich walnut tannins, while chilled sparkling Doogh offers refreshing, herb-scented probiotic acidity.

Walnut Lipid Emulsion & Polyphenol Darkening
Extended gentle simmering emulsifies polyunsaturated walnut fats with acidic pomegranate molasses, creating a glossy, naturally thickened sauce without external starches.
