  • •1 bottle Louisiana cocktail sauce (ketchup, prepared horseradish, Worcestershire, lemon)

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Brew Fiery Lemon & Spice Boil

Fill a large 16-quart stockpot with 6 quarts of water. Add seafood boil seasoning, squeezed halved lemons, halved garlic heads, and bay leaves. Bring to a rolling boil for 10 minutes to extract intense aromatic spices.

2
Step 2: Cook Potatoes & Smoked Andouille

Drop whole baby red potatoes into the boiling stock and cook for 10 minutes. Add sliced andouille sausage pieces and simmer for an additional 5 minutes until potatoes can be pierced with a fork.

3
Step 3: Add Sweet Corn & Poach Jumbo Shrimp

Toss corn cob pieces into the pot and cook for 4 minutes. Add jumbo shrimp, immediately turn off the heat, and cover with a tight lid. Let sit in the residual hot broth for 5 minutes until shrimp turn opaque pink.

4
Step 4: Drain & Dump onto Butcher Paper

Lift the perforated basket (or drain pot through a large colander). Dump the steaming seafood, sausage, corn, and potatoes directly onto brown butcher paper. Drizzle with warm garlic-butter and serve with hot sauce.

Beverage Pairing

Louisiana Abita Amber Beer or Crisp Dry Cider

An ice-cold Abita Amber or Louisiana pilsner brings crisp malt that quenches the fiery cayenne heat, while hard cider highlights the natural sweetness of sweet corn and shrimp.

Culinary Science Insight

Residual Steep Poaching & Chitin Barrier

Boiling delicate shrimp toughens muscle myosin into rubber; killing the heat and letting shrimp soak in the cooling seasoned liquor keeps proteins tender while chitin shells seal in flavor without waterlogging.
