History & Origins

UNESCO Intangible Cultural Heritage

Inscribed on UNESCO’s Intangible Cultural Heritage list, Ukrainian Borscht dates back over a millennium to Kyivan Rus. Built on a rich bone stock, it balances sweet root vegetables against tangy acids in a time-honored slow-cooking ritual.

Ingredients

Beef Short Ribs & Ruby Beetroot Base

  • •2 lbs English-cut beef short ribs (or beef shank), bone-in for rich marrow
  • •3 medium Dark red beets, peeled and grated coarsely
  • •3 cups Green cabbage, thinly shredded
  • •2 medium Yukon gold potatoes, cubed, and 1 large carrot, julienned
  • •2 tbsp Tomato paste sautéed with 2 tbsp apple cider vinegar (to fix red betanin dye)
  • •4 cloves Garlic, smashed and pounded with 2 oz cured pork salo (or butter)

Finishing, Garnishes & Chef’s Additions

  • •3/4 cup Authentic Ukrainian smetana (thick high-fat sour cream)
  • •1/2 cup Fresh dill, finely chopped
  • •6 whole Warm Ukrainian pampushky garlic bread rolls

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Simmer Rich Bone Broth

Place beef short ribs in a large stockpot covered with 10 cups cold water. Bring to a boil, skimming gray foam meticulously. Add bay leaves and black peppercorns; simmer covered on low heat for 60 minutes until beef is tender.

2
Step 2: Sauté Acidified Beetroot ‘Zazharka’

In a skillet with butter, sauté grated beets, carrots, and onions for 10 minutes. Stir in tomato paste, cider vinegar, and 1/2 cup broth; braise covered for 15 minutes to lock in the intense ruby-red color.

3
Step 3: Combine Cabbage, Potatoes & Braised Beets

Add cubed potatoes to the beef stock; simmer 10 minutes. Add shredded cabbage and the sautéed beet mixture. Simmer for an additional 12 minutes until vegetables are tender yet retain texture.

4
Step 4: Pound Garlic Salo & Rest

Mash crushed garlic with cured salo (or butter) in a mortar; stir into the hot soup with fresh dill. Turn off flame, cover, and rest for 20 minutes to meld flavors. Ladle into deep bowls, dollop with smetana, and serve with pampushky.

Beverage Pairing

Ukrainian Horilka with Honey & Pepper or Traditional Uzvar

An ice-cold shot of pepper-honey horilka ignites the palate against hearty beef, while traditional smoky uzvar (dried fruit compote) highlights beet earthiness.

Culinary Science Insight

Betanin Pigment Stabilization via Acid

Beetroot red betanin pigments degrade into dull brown in neutral or alkaline water. Sautéing beets with acidic vinegar lowers pH below 4.5, stabilizing pigment molecules into vibrant ruby red.
