Authentic German Käsespätzle (Hand-Scraped Egg Noodles Baked with Bergkäse and Crispy Fried Onions)
Fresh hand-beaten egg spätzle noodles layered with melted alpine Bergkäse and nutty Emmentaler cheese, crowned with golden shatteringly crisp fried onions.
History & Origins
Swabian Alpine Hut Comfort
Hailing from the Swabian Jura and Allgäu alpine regions of Southern Germany, Käsespätzle is the revered soul food of rustic mountain huts, where freshly dropped egg noodles are tossed directly from the boiling water with pungent mountain pasture cheeses.
Ingredients
Egg Spätzle Dough & Alpine Cheese Blend
- •3 cups (400g) German coarse spätzle flour (Spätzlemehl or unbleached all-purpose)
- •4 large Fresh eggs, beaten with 1/2 cup sparkling cold water and 1 tsp salt
- •6 oz Aged Allgäuer Bergkäse (mountain cheese), freshly grated
- •6 oz Swiss Emmentaler, freshly grated (for creamy cheese pull)
- •3 tbsp German butter and freshly grated nutmeg to taste
Finishing, Garnishes & Chef’s Additions
- •2 large Yellow onions, sliced into thin rings, dusted in flour and deep-fried until dark golden (Röstzwiebeln)
- •1/4 cup Fresh chives (Schnittlauch), finely snipped
- •1 small Side of green salad with apple cider mustard vinaigrette
Step-by-Step Instructions
PREPARATION & METHOD
In a wooden bowl, beat flour, eggs, sparkling water, salt, and nutmeg with a wooden spoon for 5-7 minutes until an elastic, glossy batter forms that stretches and forms air bubbles when lifted. Rest for 15 minutes.
Working over a large pot of boiling salted water, use a wet spätzle board and scraper (or spätzle press) to drop noodles into water. Cook for 2-3 minutes until they float to the surface; lift immediately with a spider strainer.
Butter a warm ceramic casserole dish or heavy skillet. Alternate hot drained spätzle with generous handfuls of grated Bergkäse and Emmentaler, splashing a couple of tablespoons of starchy spätzle water to melt cheese into glossy strands.
Bake in a 400°F (200°C) oven for 10 minutes until cheese is molten and bubbling. Smother top with crunchy browned fried onions and a shower of freshly cut chives. Serve immediately while molten.
Beverage Pairing
German Hefeweizen or Bavarian Helles Lager
The lively carbonation and gentle clove-banana esters of a cold Weihenstephaner Hefeweizen cut through rich alpine cheeses and match the crispy sweet onions.
Culinary Science Insight
Gluten Hydration & Emulsification via Cooking Water
Carbonated water releases micro-bubbles that disrupt dense gluten networks, creating tender noodles. Starch in the residual pasta water binds alpine dairy fat into an unctuous emulsion without breaking into oil.
