Authentic Italian Minestrone alla Genovese (Hearty Garden Vegetable and Bean Soup with Basil Pesto)
Slow-simmered seasonal vegetables, creamy cannellini beans, and aged Parmigiano rind, finished with a fragrant swirl of freshly pounded Ligurian basil pesto.
History & Origins
Ligurian Coastal Garden Kitchens
Unlike heavier tomato-laden central Italian variations, Minestrone alla Genovese celebrates the bountiful terraced gardens of Liguria, enriched with starchy barlotti or cannellini beans and crowned with freshly ground basil pesto added at the very table.
Ingredients
Garden Vegetables, Cannellini Beans & Stock
- •2 cups Cooked cannellini beans (or borlotti), half lightly mashed
- •2 medium Zucchini, diced into uniform small cubes
- •2 cups Savoy cabbage or Swiss chard, shredded
- •2 medium Carrots, 2 celery stalks, and 1 leek, finely chopped (soffritto)
- •1 large Yukon Gold potato, peeled and cubed (for natural starch body)
- •6 cups Vegetable or light chicken broth simmered with 1 aged Parmigiano rind
Finishing, Garnishes & Chef’s Additions
- •1/3 cup Fresh Ligurian basil pesto (basil, pine nuts, garlic, Parmigiano, olive oil)
- •1/2 cup Freshly grated Parmigiano-Reggiano
- •2 tbsp Fruity Ligurian extra virgin olive oil for finishing
Step-by-Step Instructions
PREPARATION & METHOD
Heat 3 tbsp olive oil in a heavy soup pot over medium heat. Add finely diced carrots, celery, leek, and minced garlic; cook gently for 8-10 minutes until soft and fragrant without browning.
Add cubed potato, savoy cabbage, broth, and the Parmigiano rind. Bring to a boil, reduce to a low simmer, cover partially, and cook for 25 minutes until potato is tender.
Fold in diced zucchini, whole cannellini beans, and mashed cannellini beans. Simmer for an additional 12-15 minutes until zucchini is tender-crisp and the broth is naturally thickened by the bean starch.
Discard parmesan rind. Ladle hot soup into wide rustic bowls. Swirl a generous tablespoon of fresh basil pesto directly into each bowl, finish with grated Parmigiano and crusty country bread.
Beverage Pairing
Ligurian Pigato or Vermentino Riviera Ligure
Crisp, saline-kissed Ligurian Vermentino features delicate herbal notes that harmonize perfectly with garden greens and fresh basil pesto.
Culinary Science Insight
Parmigiano Glutamate Synergy & Starch Thickening
Simmering an aged cheese rind slowly leaches free glutamic acid and umami guanylates into the water, while potato and mashed bean amylose create body without heavy roux flours.
