History & Origins
Joseon Royal Court Feast Elegance
Originally created in early 17th-century Joseon dynasty by court official Yi Chung for King Gwanghaegun, Japchae (literally ‘mixed vegetables’) evolved into Korea’s essential celebration dish when sweet potato starch dangmyeon noodles were introduced in the 1920s.
Ingredients
Dangmyeon Glass Noodles & Seasoned Ribeye
- •8 oz Korean sweet potato starch glass noodles (dangmyeon)
- •6 oz Beef ribeye or flank steak, sliced into thin matchsticks
- •5 oz Fresh baby spinach, blanched and gently squeezed
- •5 dried Shiitake mushrooms, rehydrated and julienned
- •1 medium Carrot, julienned, and 1 sweet yellow onion, sliced
- •4 tbsp Soy sauce, 2 tbsp sugar, and 2 cloves minced garlic for master sauce
Finishing, Garnishes & Chef’s Additions
- •2 tbsp Pure Korean toasted sesame oil (chamgireum)
- •1 tbsp Toasted white sesame seeds, crushed lightly between fingers
- •1 large Egg yolk jidan (thin omelet strips) for traditional court presentation
Step-by-Step Instructions
PREPARATION & METHOD
Toss sliced beef with 1 tbsp soy sauce, 1 tsp sugar, sesame oil, and garlic. Boil dangmyeon noodles in salted water for 7 minutes until springy and translucent. Drain, cut with kitchen shears, and toss with sesame oil to prevent sticking.
Sauté each vegetable separately in a hot oiled wok (onions, carrots, shiitakes) with a pinch of salt for 60-90 seconds to preserve distinct crunch and vibrant colors. Transfer sequentially to a massive mixing bowl.
Flash-fry marinated beef over high heat for 2 minutes until caramelized. Add noodles, remaining soy sauce, sugar, and garlic directly to the pan, tossing for 2 minutes until noodles absorb the savory amber glaze.
Combine warm seasoned noodles with sautéed vegetables, blanched seasoned spinach, and beef. Using clean gloved hands, toss with toasted sesame oil and sesame seeds. Crown with golden egg ribbons.
Beverage Pairing
Chilled Korean Makgeolli or Roasted Barley Tea (Boricha)
The gentle effervescence and creamy sweetness of unpasteurized makgeolli rice wine accentuate the toasted sesame aromatics and umami-rich soy noodles.
Culinary Science Insight
Amylose Retrogradation in Sweet Potato Starch
Sweet potato starch contains pure amylose polymers that produce a distinct springy, gelatinized elastic structure, allowing dangmyeon to absorb hot seasoned liquid without dissolving.
