Authentic Swedish Meatballs (Köttbullar with Rich Cream Gravy, Lingonberries & Buttery Mash)
Tender, spiced pork and beef meatballs bathed in a velvety pan-dripping cream gravy, accompanied by tart lingonberry jam and whipped Yukon Gold potatoes.
History & Origins
Nordic Feast Tradition & Royal Heritage
King Charles XII of Sweden brought back spiced meat recipes from the Ottoman Empire in the early 18th century, which evolved into Sweden’s national comfort dish characterized by allspice, nutmeg, and a signature lingonberry relish.
Ingredients
Spiced Meatballs & Pan Gravy
- •1 lb Ground beef chuck (80/20 lean-to-fat ratio)
- •1/2 lb Ground pork
- •1/2 cup Panko breadcrumbs soaked in 1/2 cup heavy cream
- •1 large Yellow onion, grated finely and sautéed in butter
- •1/2 tsp Ground allspice and 1/4 tsp ground nutmeg
- •2 cups Rich beef stock combined with 1/2 cup heavy cream for gravy
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Wild Swedish lingonberry preserves
- •2 lbs Yukon Gold potatoes, riced with butter and whole milk
- •2 tbsp Fresh dill and Italian flat-leaf parsley, chopped
Step-by-Step Instructions
PREPARATION & METHOD
Soak panko breadcrumbs in heavy cream for 10 minutes until softened. In a large bowl, gently knead beef, pork, sautéed cooled onion, egg, allspice, and nutmeg until emulsified. Shape into uniform 1-inch balls.
Melt unsalted butter in a deep skillet over medium heat. Working in batches, brown meatballs gently on all sides until caramelized and cooked through, about 8-10 minutes. Transfer to a warm platter.
Whisk flour into pan drippings to form a light golden roux. Slowly whisk in beef bone broth and heavy cream, scraping fond. Simmer for 5 minutes until glossy, thick, and coats the back of a spoon.
Return browned meatballs to the simmering gravy for 3 minutes. Ladle over warm whipped potatoes, drizzle generously with gravy, and spoon tart lingonberry jam alongside.
Beverage Pairing
Swedish Aquavit or Crisp Scandinavian Pilsner
The caraway notes of chilled aquavit and the crisp effervescence of a pale pilsner cut through the rich butter gravy and complement the warm spice profile.
Culinary Science Insight
Panade Starch Gelation & Meat Tenderness
Soaking breadcrumbs in dairy forms a gelatinous starch matrix that traps juices during thermal denaturation, preventing meat proteins from contracting into a tough texture.
