History & Origins
Ischia & Gulf of Naples Pungent Heritage
Originating on the island of Ischia in the Gulf of Naples in the 1950s, Puttanesca was famously coined when late-night restaurant patrons urged the chef to ‘make whatever junk you have on hand’ (puttanata). Relying strictly on non-perishable Mediterranean pantry gems, it became an international culinary icon.
Ingredients
Spaghetti & Savory Pantry Base
- •1 lb (450g) Bronze-cut Spaghetti di Gragnano IGP
- •1 can (28 oz / 800g) Whole San Marzano tomatoes DOP, hand crushed
- •1/4 cup Campania extra virgin olive oil
- •4 cloves Garlic, smashed and peeled
- •6 Salt-packed Cetara anchovy fillets, rinsed and drained
- •1/2 tsp Crushed dried Calabrian chili flakes (peperoncino)
Finishing, Garnishes & Chef’s Additions
- •3/4 cup (100g) Gaeta black olives (or Kalamata), pitted and crushed with the flat of a knife
- •3 tbsp (40g) Salt-packed Pantelleria capers, thoroughly soaked in cold water for 20 minutes and drained
- •1/2 cup Fresh flat-leaf Italian parsley, roughly chopped
- •1/2 cup Starchy pasta cooking water (strictly NO cheese as per Neapolitan seafood tradition)
Step-by-Step Instructions
Preparation & Method
Heat extra virgin olive oil in a wide skillet over medium-low heat. Add smashed garlic cloves and red pepper flakes, sizzling gently for 2 minutes without burning. Add the anchovy fillets, pressing with a wooden spoon until they dissolve completely into savory golden paste.
Stir in soaked capers and crushed Gaeta olives, sautéing for 1 minute to release their briny oils. Pour in hand-crushed San Marzano tomatoes and their juice. Simmer gently over medium heat for 12-15 minutes until sauce thickens and olive oil pools on the edges.
Drop spaghetti into a pot of moderately salted boiling water (remembering olives and capers provide saltiness). Boil until 2 minutes shy of al dente. Reserve 1/2 cup of cloudy starchy pasta cooking water before draining.
Transfer the spaghetti directly into the sauce. Add 1/3 cup pasta water and toss (saltare) vigorously over high heat for 90 seconds until the sauce emulsifies and clings to every strand. Stir in chopped fresh parsley, twirl into deep bowls, and serve immediately.
