History & Origins

Venetian-Hellenic Heritage

Introduced to the Ionian islands by the Venetians in the 13th century (from the Italian ‘stufato’, meaning stewed), Stifado was thoroughly Hellenized with local spices, sweet fortified red wines, and mountains of baby shallots or pearl onions that melt into the sauce.

Ingredients

Beef Chuck & Spiced Wine Braise

  • •2.5 lbs (1.1kg) Beef chuck roast or shin, trimmed and cut into 2-inch chunks
  • •2 lbs (900g) Fresh baby pearl onions or shallots, peeled whole with root intact
  • •1.5 cups (350ml) Greek Mavrodaphne sweet red wine (or dry red wine plus 1 tbsp honey)
  • •1/4 cup Red wine vinegar & 3 tbsp Greek extra virgin olive oil
  • •1 can (14 oz / 400g) Crushed San Marzano tomatoes & 2 tbsp tomato paste

Finishing, Garnishes & Chef’s Additions

  • •1 whole Ceylon cinnamon stick & 4 whole allspice berries
  • •3 whole Cloves & 2 dried bay leaves
  • •5 cloves Garlic, smashed, and 1 tsp dried Greek oregano
  • •Accompaniment Crumbled sheep feta cheese, hilopites egg pasta (or crusty bread)

Step-by-Step Instructions

Preparation & Method

1
Step 1: Deep Brown Beef Chuck

Season beef cubes liberally with sea salt and black pepper. Heat olive oil in a heavy Dutch oven over high heat. Sear beef in uncrowded batches for 4-5 minutes per side until deeply browned and caramelized; transfer to a platter.

2
Step 2: Glaze Whole Pearl Onions

Add peeled whole pearl onions to the remaining rendered oil. Sauté gently on medium heat for 7-8 minutes, rolling them carefully until golden brown all around. Remove onions and set aside so they don’t break down during the initial long meat braise.

3
Step 3: Deglaze with Wine & Spices

Add garlic and tomato paste to the pot, frying for 1 minute. Deglaze with red wine vinegar and Mavrodaphne sweet wine, scraping fond from the bottom. Return beef and accumulated juices to the pot; add crushed tomatoes, cinnamon stick, allspice, cloves, bay leaves, and oregano.

4
Step 4: Low Simmer with Onions & Plating

Cover and simmer on low for 60 minutes. Gently fold in the caramelized pearl onions, cover, and continue simmering for an additional 50-60 minutes until beef is fork-tender and the sauce is glossy and syrupy. Discard cinnamon and bay leaves; serve hot with feta and hilopites.

Beverage Pairing

Naoussa Xinomavro Red Wine / Nemea Agiorgitiko

A bold, high-tannin Xinomavro red wine echoes the spiced aromatics of cinnamon and allspice, while its firm acidity balances the natural sweetness of glazed pearl onions.

Culinary Science Insight

Collagen Gelatinization & Cinnamaldehyde Diffusion

Extended low-temperature simmering converts tough beef collagen triple-helix fibrils into unctuous liquid gelatin, lending body to the braise. Cinnamaldehyde from the whole cinnamon stick is fat-soluble and slowly extracts into the rendered beef lipids, diffusing deep warming notes without bitterness.
