History & Origins
Athenian & Thessaloniki Street Food Legend
Derived from the Greek word ‘gyros’ meaning ‘turn’, vertical rotating spit-roasting was introduced to Greece following the 1922 Asia Minor population exchange. In Greece, pork is the undisputed traditional choice, seasoned assertively with wild Mediterranean oregano, garlic, and red wine vinegar.

Step-by-Step Instructions
Preparation & Method
Slice pork shoulder across the grain into very thin cutlets (1/4 inch thick). Toss with olive oil, red wine vinegar, garlic, oregano, paprika, cumin, salt, and black pepper. Marinate in the refrigerator for at least 2 hours or overnight.
Stack marinated pork cutlets tightly onto skewers (or roast vertically using an onion base at 400°F / 200°C for 45 minutes). Alternatively, sear cutlets in a smoking-hot cast iron skillet for 3 minutes per side until charred and crisp.
Shave the exterior charred crust of the meat stack into wafer-thin crispy ribbons using a long carving knife. Give the shavings a final 30-second flash toss in the rendered pan juices to coat in seasoned fat.
Warm the pita on an oiled grill. Spread 2 generous tablespoons of tzatziki down the center, layer hot pork ribbons, sliced tomatoes, red onions, and tuck hot French fries right inside. Roll tightly in parchment paper and serve immediately.
