History & Origins

Edo Period Summer Stamina Tradition

Unadon was created in late 18th-century Edo (modern Tokyo) by theater financier Imasuke Okubo. Regarded as Japan’s ultimate stamina-boosting culinary delight on Doyo no Ushi no Hi (Midsummer Day of the Ox), Kabayaki-style grilling over binchotan charcoal creates unmatched smoky caramelized depth.

Ingredients

Unagi & Sweet Tare Glaze

  • •4 fillets (approx. 1.5 lbs) Prepared freshwater unagi eel fillets
  • •1/2 cup Japanese dark soy sauce (Koikuchi Shoyu)
  • •1/2 cup Hon-mirin (authentic sweet cooking rice wine)
  • •1/4 cup Junmai sake
  • •3 tbsp Japanese raw turbinado or granulated sugar
  • •4 cups Steamed Japanese short-grain rice (Koshihikari)

Finishing, Garnishes & Chef’s Additions

  • •1 tsp Ground green sansho pepper (Japanese citrus mountain pepper)
  • •2 stalks Scallions, sliced paper-thin
  • •Side Japanese pickled ginger (Gari) or Kyuri Asazuke cucumber pickles
  • •Soup Clear dashi eel liver broth (Kimosui) or dark red miso soup

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Reduce Master Unagi Tare

Combine soy sauce, hon-mirin, sake, and sugar in a small saucepan over medium heat. Bring to a gentle boil, then simmer on low for 10-12 minutes until syrupy, glossy, and reduced by one-third. Set aside.

2
Step 2: Sake Steam Unagi (Kanto Method)

Place unagi fillets on a parchment-lined baking sheet or steamer rack. Splash lightly with 2 tbsp sake. Steam over boiling water or in a 350°F oven for 6 minutes to render excess oils and make the flesh tender.

3
Step 3: Triple Glaze & High Broil

Transfer fillets to a wire rack under a preheated oven broiler (or charcoal grill). Brush generously with tare glaze and broil for 2 minutes. Repeat brushing with tare twice more until the surface bubbles with caramelized dark mahogany blisters.

4
Step 4: Donburi Assembly & Sansho Dusting

Ladle hot Koshihikari rice into deep lacquered donburi bowls. Drizzle 1-2 tablespoons of warm tare over the rice. Lay glistening glazed eel fillets over the top and dust lightly with fragrant green sansho pepper.

Beverage Pairing

Junmai Ginjo Sake / Roasted Hojicha Green Tea

A dry, rice-forward Junmai Ginjo sake balances sweet tare sauce, while nutty roasted hojicha cuts through the rich lipid content of freshwater eel.

Culinary Science Insight

Sorbitol Glaze Viscosity & Sanshool Paresthesia

Boiling hon-mirin with soy sauce creates a high-gloss glaze via glucose-fructose condensation that seals moisture into eel flesh. Sansho pepper contains hydroxy-alpha-sanshool, inducing a subtle 50Hz tingling sensation on tongue mechanoreceptors that enhances flavor perception.
