History & Origins
The Guia Algarve Churrasqueira Heritage
Born from transcontinental trade between Portugal, Mozambique, and Angola, Frango com Piri-Piri blossomed in the Algarve town of Guia into Portugal’s favorite roadside sensation. Spatchcocking ensures uniform heat conduction while the piri piri baste builds a crackling, smoky lacquered skin.

Step-by-Step Instructions
Preparation & Method
Blend bird’s eye chilies, garlic, olive oil, lemon juice, red wine vinegar, white wine, smoked paprika, bay leaves, and salt in a blender until smooth. Warm in a small saucepan over low heat for 5 minutes to bloom aromatics; reserve 1/3 for finishing.
Cut out the chicken backbone with heavy kitchen shears. Flip bird breast-side up and press firmly down on the breastbone with your palms until it cracks flat. Coat chicken thoroughly in piri piri marinade and chill for 6 to 12 hours.
Prepare a grill for two-zone medium heat (or preheat oven to 425°F/220°C with cast iron skillet). Cook chicken bone-side down over indirect heat for 30 minutes. Turn chicken skin-side down over direct coals and grill for 10–12 minutes, basting generously with warm piri piri sauce every 3 minutes until skin is deeply charred and crisp.
Rest chicken for 10 minutes. Use a heavy cleaver to chop into rustic pieces in true churrasqueira style. Brush with remaining piri piri butter glaze, squeeze over smoky grilled lemon juice, and serve immediately with hot chips.
Beverage Pairing
Portuguese Vinho Verde / Super Bock Pale Lager
An effervescent, bone-dry Vinho Verde cuts through char and fiery chili heat with tongue-tingling acidity, while a cold Super Bock offers refreshing crisp malt refreshment.
Culinary Science Insight
Capsaicin Liposolubility & Spatchcock Thermodynamics
Lipid molecules in the warm olive oil base solubilize hydrophobic capsaicin crystals from chili seeds, dispersing intense heat evenly into rendering poultry skin rather than blistering.
