Step-by-Step Instructions
PREPARATION & METHOD
In a food processor, pulse ground hazelnuts, flour, sugar, cinnamon, cloves, allspice, lemon zest, and salt. Add cold diced butter; pulse until fine pea-sized crumbles form. Add egg yolk and rum, pulsing just until dough gathers into a ball. Divide into 2/3 and 1/3 portions; chill for 1 hour.
Preheat oven to 350°F (175°C). Butter a 9-inch fluted tart pan with removable bottom. Press the larger 2/3 portion of chilled dough evenly over bottom and 1 inch up the sides. Spread tart redcurrant jam in an even layer across the crust.
Roll remaining 1/3 dough between parchment sheets into a thin circle. Cut into 1/2-inch strips using a fluted pastry wheel. Arrange strips diagonally across jam in a crisscross diamond lattice. Press sliced almonds around outer rim. Brush lattice strips gently with beaten egg wash.
Bake for 40 to 45 minutes until the pastry is deep golden brown and the jam is bubbling gently. Cool completely on a wire rack. Dust edges lightly with powdered sugar. For the authentic Austrian experience, rest covered for 24 to 48 hours before slicing to allow spiced shortbread to soften and mature.
Beverage Pairing
Viennese Melange Coffee or Austrian Eiswein
A frothy Viennese espresso melange or luscious honeyed Austrian Eiswein balances warm cinnamon clove spices and sharp redcurrant jam.
Culinary Science Insight
Fat-to-Flour Friability & Moisture Osmosis Maturation
High nut lipid content inhibits gluten network development, yielding an extraordinarily crumbly (“mürbe”) shortbread crust. Resting for 24-48 hours allows jam moisture to equalize osmotically throughout the crust without making it soggy.
