Step-by-Step Instructions
PREPARATION & METHOD
Heat 1/4 cup olive oil in a skillet over medium heat. Sauté minced onions and scallions for 6 to 8 minutes until translucent. Stir in rinsed rice, toasted pine nuts, salt, and pepper for 2 minutes. Remove from heat and fold in chopped dill, mint, and parsley.
Place a grape leaf vein-side up on a clean board with the stem end facing you. Place 1 tablespoon of rice filling near the stem. Fold bottom edge up over filling, fold sides snugly inward like an envelope, and roll forward into a compact cigar shape (leave slightly loose to allow rice to expand).
Line bottom of a heavy Dutch oven with torn grape leaves. Arrange rolled dolmades seam-side down in tight concentric circles, packing them closely. Drizzle remaining olive oil and lemon juice over rolls, then pour warm water or vegetable broth just until submerged. Invert a heavy heatproof ceramic plate on top to keep rolls submerged.
Bring to a simmer, cover with pot lid, and cook on low heat for 45 to 50 minutes until rice is tender and leaves are supple. Remove from heat and cool completely in pot for at least 1 hour so the dolmades absorb all remaining lemony olive oil juices. Serve at room temperature.

Culinary Science Insight
Starch Gelatinization under Hydraulic Pressure
Weighing the rolled leaves with an inverted plate keeps them submerged, creating hydrostatic pressure that forces lemon-infused olive oil into expanding short-grain rice starches while preventing unfurling.
