Authentic Mexican Pork Chile Verde (Slow-Simmered Tomatillo Pork Stew)
Northern Mexico’s legendary stew of browned pork shoulder chunks slow-simmered in a vibrant salsa verde of fire-roasted tomatillos, charred poblanos, jalapeños, and fragrant Mexican oregano.
History & Origins
Ranchero Hearth of Northern Mexico
Rooted in the vaquero and ranchero culinary traditions across Northern Mexico and the American Southwest, Chile Verde showcases the ancient Mesoamerican tomatillo (miltomate), which provides a tart, herbaceous counterpoint to rich pork shoulder.

Step-by-Step Instructions
PREPARATION & METHOD
Place tomatillos, poblano peppers, jalapeños, onion halves, and unpeeled garlic cloves on a baking sheet under a high broiler (or on a dry comal) for 7 to 8 minutes, turning once until blackened and blistered all over.
Peel charred garlic. Transfer roasted tomatillos (with juices), stemmed chiles, onion, peeled garlic, cilantro, Mexican oregano, cumin, and 1 cup broth to a blender. Pulse until smoothly pureed with vibrant emerald specks.
Heat 2 tablespoons lard or oil in a heavy Dutch oven over high heat. Season pork shoulder cubes generously with sea salt and black pepper. Sear pork in uncrowded batches for 4 to 5 minutes per side until deeply golden-brown and caramelized. Transfer to a bowl.
Pour blended salsa verde into hot pot, sizzling aggressively and deglazing fond. Return browned pork and juices with remaining broth and bay leaves. Simmer on low, covered, for 1.5 to 2 hours until pork is meltingly tender and sauce is thick and velvety. Serve with warm corn tortillas.
Beverage Pairing
Chilled Pacifico / Modelo Especial or Paloma
A crisp Mexican lager with a lime wedge or an effervescent tequila and grapefruit Paloma cuts through rich braised pork and elevates tangy roasted tomatillo acid.
Culinary Science Insight
Pectin Gelation & Thermal Collagen Tenderization
Tomatillos are naturally rich in plant pectins. As they simmer with pork shoulder, their natural pectins cross-link with collagen gelatin released from connective tissue, transforming watery salsa into an unctuous, thick stewing sauce without roux.
