Authentic Italian Spaghetti all’Assassina (Bari Burnt Killer Spaghetti)
Bari’s fiery cult pasta specialty—raw bronze-cut spaghetti charred directly in a blazing cast-iron skillet, risottata-style, with intense garlic, fiery Calabrian chiles, and sweet tomato broth until blistered and crunchy.
History & Origins
Al Sorso Preferito in Bari, Puglia
Created in the late 1960s by chef Enzo Francavilla at Ristorante Al Sorso Preferito in Bari, this dish purposefully breaks classic pasta dogma: uncooked spaghetti is fried directly in oil and tomato until deeply scorched and caramelized.

Step-by-Step Instructions
PREPARATION & METHOD
In a saucepan, whisk tomato paste and passata into 5 cups of hot water with 1 teaspoon of salt. Keep hot at a gentle simmer on an adjacent burner throughout cooking.
In a wide cast-iron or carbon steel skillet, heat olive oil over medium heat. Sauté sliced garlic and crushed Calabrian chiles for 90 seconds until garlic is fragrant and pale gold (do not let burn yet).
Lay dry uncooked spaghetti directly into the oil in the skillet. Ladle 2 cups of hot tomato broth over the pasta. Turn heat to high. As liquid evaporates, the spaghetti will soften and stick to the pan bottom. Let it fry undisturbed for 3 to 4 minutes until it sizzles aggressively and develops charred, blackened patches.
Using a metal spatula, turn and scrape the spaghetti to expose uncharred strands. Add another ladle of tomato broth, letting it sizzle and reduce. Repeat 2 to 3 times for 12 to 15 minutes until pasta is chewy al dente, coated in glossy brick-red sauce, and speckled with crunchy charred strands.
Beverage Pairing
Primitivo di Manduria or Salice Salentino
A robust, sun-drenched Pugliese red with ripe blackberry fruit and smooth tannins holds its own against intense chili heat and charred caramelized tomato.
Culinary Science Insight
Dextrinization & Controlled Carbonaceous Maillard Reaction
Cooking pasta raw in oil and reducing tomato sauce drives intense Maillard reactions and starch dextrinization. Cast-iron heat blisters surface sugars into savory charred pyrazines without turning the core bitter.
