Vietnam’s iconic sizzling street crepe—a golden, lace-edged coconut-turmeric batter fried paper-thin, folded over plump gulf shrimp, tender pork belly, and crunchy bean sprouts, wrapped in fragrant herbs.
History & Origins
Mekong Delta Street Food Sizzle
Named onomatopoeically after the loud sizzling sound (“xèo”) when batter hits a searing hot skillet, Bánh Xèo originated in the fertile Mekong Delta, combining rice-farming traditions with French crepe influences into a crispy turmeric marvel.

Step-by-Step Instructions
PREPARATION & METHOD
Whisk rice flour, cornstarch, turmeric, salt, coconut milk, sparkling water, and chopped scallions until completely smooth without lumps. Rest at room temperature for 30 minutes to allow rice starches to hydrate thoroughly.
Heat 1 tablespoon oil in a 10-inch nonstick or seasoned cast-iron skillet over high heat. Add a few slices of pork belly, shrimp, and onions. Sauté for 60 seconds until pork renders fat and shrimp turn pink.
Pour 1/2 cup batter into skillet, swirling immediately so it coats bottom and runs up the sides into a wafer-thin golden lace. Scatter bean sprouts over one half. Cover with a lid and cook on medium-high for 2.5 minutes until sprouts steam.
Remove lid, drizzle 1/2 teaspoon oil around edges, and fry uncovered for 2 minutes until edges pull away, turn crispy, and crackle. Fold crepe in half over bean sprouts. Slide onto a platter; cut into pieces and wrap in lettuce and fresh herbs before dipping in nước chấm.
Beverage Pairing
Chilled Saigon Special Lager or Fresh Coconut Water
An ice-cold Vietnamese rice lager or fresh young green coconut water cuts through the rich coconut-fried crepe and complements vibrant fresh herbs.
Culinary Science Insight
Sparkling Carbonation Aeration & Lipid Crispness
Carbonated water creates micro-fissures in the rice flour batter when heated rapidly, allowing steam to escape and producing an ultra-thin, crunchy honeycomb structure that remains crisp without getting soggy.
